Easy Keto Tomato Soup
This easy keto tomato soup is amazingly hearty and flavorful. In just 30 minutes, you can have this comfort food soup ready to serve!
Ingredients
- 1 tablespoon butter
- ¼ cup chopped onion
- 1 (28 ounce) can petite diced tomatoes
- 1 (24-26) ounce jar keto pasta sauce
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon granulated sugar substitute (Swerve)
- 2 teaspoons Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup heavy whipping cream
- Optional: top with fresh grated or shaved Parmesan or Parmesan-Reggiano cheese or with fresh basil
Instructions
1. In a large stockpot, over medium heat, saute onions in butter until onions start to soften, 4-5 minutes.
2. Add diced tomatoes, pasta sauce, chicken broth, tomato paste, sugar, Italian seasoning, salt, and pepper. Stir to combine.
3. Increase heat to high until soup comes to a boil. Decrease heat to medium and simmer 10-15 minutes, stirring occasionally.
4. Use an immersion blender and blend to desired consistency.
5. Stir in heavy whipping cream.
6. Top with fresh grated or shaved Parmesan or Parmesan-Reggiano cheese or fresh basil if desired.
