To keep this recipe keto, we are using heavy cream instead of milk. 1 cup of milk contains 12 grams of carbs while 1 cup of cream contains only 7 grams. We are also using an erythritol sugar substitute which is a sugar alcohol and adds zero grams of carbs. Isn’t that awesome!
Helpful Hints:
*The infamous “they” say this mixture will reduce by nearly half while it cooks. I’m living and cooking at an elevation of about 7350 feet and my mixture only reduced a little bit. If you make this, I’d love to hear how yours reduces. Mine got thick and tasted awesome, regardless of its lack of reduction!
*This recipe isn’t one that you have to stir continuously while cooking. You can stir it or whisk it every few minutes.
*The crucial time to watch this recipe is when it starts to bubble around the sides of the saucepan. Turn the heat down to medium low at this time or you run the risk of the mixture boiling over and out of the pan. Trust me on this point as seen below with my first batch.

Keto Sweetened Condensed Milk

Ingredients
- 2 cups heavy whipping cream
- ¾ cup granulated sugar substitute (Swerve)
- 4 tablespoons butter
- 1 teaspoon vanilla
Instructions
1. In a medium saucepan, over medium heat, whisk together heavy whipping cream and sugar.
2. Whisk mixture every few minutes.
3. When mixture first starts bubbling at the sides of the saucepan, decrease heat to medium low.
4. Continue to whisk mixture together every few minutes.
5. Cook until mixture starts to thicken and to reduce, about 30-35 minutes. Remove from heat and stir in butter and vanilla.
6. Set aside until mixture cools. It will thicken further while cooling.
7. Store in a securely covered container in the refrigerator.
Notes
Keep a close watch for your mixture to first start bubbling. Decrease the heat to medium low at this time or mixture may bubble up and overflow over the sides of the saucepan.
