This low carb smoked sausage zucchini soup is an amazingly fresh and delicious soup! I love making comfort food soups for my family, and this one was a huge hit! We combine just a few fresh ingredients with a delicious and flavorful broth to make this delicious soup. This is one of our favorites and I hope you’ll enjoy it as much as we do!

You have some great options for the kind of sausage you use in this soup. You can use either ring sausage or sausage links, but you’ll want to make sure it’s fully cooked sausage. Depending on how the sausage is prepared and what ingredients are added to it, the carb count can vary quite a bit. So you’ll want to check your nutritional labels when buying to make sure there are no added ingredients you don’t want, and to ensure your sausage is low in carbs. I like to use sausage that has 1 net gram of carbs or less per serving. For my soup, I used smoked sausage which combined beef and pork. Alternately, you can use beef, chicken, pork, or turkey sausage. You will want to cut it into bite sized pieces and fry it up before adding it to the soup.
What other ingredients go into this low carb smoked sausage zucchini soup?
We start with sauteing diced peppers and onions in butter and olive oil. I used an orange bell pepper, but you can use any color or color combination you’d like for your soup. I added 2 minced garlic cloves, but you can add more if you’d prefer. For our delicious broth, we combine chicken broth with petite diced tomatoes. I used chicken broth, but beef or vegetable broth would work great too. For the tomatoes, if you want larger pieces, you can use regular diced in place of the petite diced tomatoes. I sliced my zucchini and left the pieces whole. Alternately, you can go a step further and cut you slices into bite size pieces if you’d like. Our ingredients bring such awesome flavor, we only add a few things to further season our soup. We simply add some fresh parsley, dried oregano, salt, and pepper.

This is a satisfying soup that can be served as a meal in itself. It’s a great soup option for lunch, brunch, or dinner. If you’d like, you can top your soup with some additional fresh chopped parsley or with some fresh grated or shaved Parmesan cheese. You can also serve your soup with some keto biscuits, cornbread, or English muffins. Add a salad and you’ll have an amazing soup and salad meal! A Caesar salad is always a great choice! You can also serve this soup with a burger, keto sandwich, or lettuce wrap. Adding this soup as a side for keto casseroles is also a great choice!

Ingredients
- 14 ounces cooked smoked sausage, cut into bite size pieces
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 medium bell pepper, diced
- ⅓ cup diced onion
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can petite diced tomatoes
- 2 medium zucchini, sliced
- ¼ cup fresh chopped parsley
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a medium skillet over medium heat, saute sausage until browned, 7-10 minutes.
2. While sausage is cooking, in a large stockpot, over medium heat, saute peppers and onions in butter and olive oil until vegetables start to soften, 4-5 minutes. Add garlic during last minute.
3. Add sausage to stockpot along with remaining ingredients.
4. Over high high bring soup to a boil. Decrease heat to medium and simmer 7-10 minutes, or until zucchini is tender.
5. Serve immediately.
