This keto red cabbage dill pickle slaw is a pretty and flavorful salad. It’s an awesome choice for barbecues, picnics, get togethers, and any time you’d like a delicious slaw dish! It takes under 30 minutes to make this salad, so it’s a great option even on your busiest of days!

I used a medium head of red cabbage for my slaw. This comes out to be about 8 cups of chopped cabbage. If you’d like, you could use a combination of red and green cabbage for your slaw. I enjoy making most of my salads homemade, but I also love the convenience of pre-made coleslaw mixes and this would be a great option for making this slaw as well. I love dill pickles and am partial to homemade dill pickles or to the Claussen brand, but you can use your favorite brand for your slaw. To add some awesome color to my slaw, I chose to use an orange bell pepper. You can use any color of bell pepper you’d like for your slaw. You can also use a combination of different colors of peppers as well.
How do I make the dressing for this keto red cabbage dill pickle slaw?
The dressing for this slaw is a creamy dressing which comes together quickly and is amazingly delicious. We combine keto mayonnaise and sour cream to create the creamy base for our dressing. I used the Chosen Foods brand avocado oil mayonnaise for my slaw. When buying mayo, you’ll want to check your nutritional labels to ensure there is no added sugar or other ingredients you don’t want in your mayonnaise. To our mayo and sour cream, we add apple cider vinegar, dill pickle juice, and Dijon mustard which bring amazing flavor to the dressing. They add the perfect briny and tart flavors! A little keto sugar balances out all the flavors perfectly. For seasoning, we simply add celery seed, dried dill, salt, and pepper. If you’d like to use fresh dill, you’ll want to use 1 tablespoon of fresh dill in place of the 1 teaspoon of dried.

Ingredients
- 1 medium head red cabbage, thinly sliced
- ½ cup chopped dill pickles
- ½ cup diced bell peppers
- ¼ cup keto mayonnaise
- ¼ cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon dill pickle juice
- 2 teaspoons Dijon mustard
- 2 teaspoons granulated sugar substitute (Swerve)
- 1 teaspoon celery seed
- 1 teaspoon dried dill
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a large mixing bowl, add red cabbage, pickles, and peppers. Stir to combine. Set aside.
2. In a medium mixing bowl, add remaining ingredients. Stir to combine.
3. Pour dressing mixture over cabbage mixture. Stir until completely combined.
4. Serve immediately or refrigerate 30-60 minutes, or until ready to serve.
