I wanted a chunky chili, so I used regular diced tomatoes; but if you’d prefer, you can used petite diced tomatoes. For the Rotel, you can use mild, regular, or hot depending on the spice level you’d like to achieve. If you’d like an even hotter chili, you could also add some diced jalapenos.

Keto Fajita Seasoned Chili

Ingredients
For the fajita seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon cayenne
- ¼ teaspoon pepper
For the chili:
- 1½ pounds ground beef
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 medium red bell pepper, diced
- ½ medium onion, diced
- 1 (28 ounce) can diced tomatoes
- 1 (10 ounce) can Rotel diced tomatoes & green chilies
- 2 cups beef broth
Instructions
For the fajita seasoning:
1. In a small bowl, add all ingredients.
2. Stir to combine. Set aside.
For the chili:
1. In a large skillet, over medium high heat, cook ground beef until no longer pink, breaking up into pieces while cooking. Drain the grease well.
2. In a large stockpot, over medium heat, melt butter and olive oil. Add diced peppers and onions. Saute for 5-7 minutes or until vegetables start to soften.
3. To the stockpot, add cooked ground beef, fajita seasoning, and remaining ingredients. Stir to combine.
4. Increase heat to high. Bring mixture to a boil. Decrease heat to medium and simmer for 15-20 minutes, stirring occasionally.
