For me, it brings back sweet childhood memories of a candy thermometer in a hot, thick, and gooey concoction bubbling away in a saucepan on the stove. But with this keto fudge, which has only 1.3 carbs per piece, you can make it all year round. And there are no candy thermometers involved!
How do I make keto sweetened condensed milk?
Making your own keto sweetened condensed milk takes about 35 minutes, but is well worth it. In this keto fudge recipe, I’ve included the time needed to make the sweetened condensed milk. But you can make it anytime and store it for weeks in the fridge. Here is my keto sweetened condensed milk recipe!

Ingredients:
2 cups heavy whipping cream
¾ cup granulated sugar substitute (Swerve)
4 tablespoons butter
1 teaspoon vanilla
Directions:
1. In a medium saucepan, over medium heat, whisk together heavy whipping cream and sugar.
2. Whisk mixture every few minutes.
3. When mixture first starts bubbling at the sides of the saucepan, decrease heat to medium low.
4. Continue to whisk mixture together every few minutes.
5. Cook until mixture starts to thicken and to reduce, about 30-35 minutes. Remove from heat and stir in butter and vanilla.
6. Set aside until mixture cools. It will thicken further while cooling.
7. Store in a securely covered container in the refrigerator.
Helpful Hints:
*You can use any keto chocolate chips in this recipe. I used Lily’s dark chocolate chips because I’m a bit partial to dark chocolate!
*You might want to hide a piece or two of this fudge in an unmarked container in the back of the fridge because it will disappear quickly!

Instructions
1. Line an 8x8 inch pan with parchment paper to cover bottom and up sides of pan.
2. In a medium sized microwave safe bowl, place condensed milk and chocolate chips.
3. Microwave for 30 seconds and stir mixture. Repeat microwaving and stirring at 30 second intervals until chocolate chips are melted and mixture is combined and smooth, 2½ -3 minutes total.
4. Pour mixture into prepared pan and refrigerate until set, 2 hours or overnight.
5. Store in the refrigerator, taking it out 15 minutes prior to serving.
Notes
Making your own keto sweetened condensed milk takes about 35 minutes. But you can make it ahead of time and store it in the refrigerator. Then the actual time it takes to make this fudge recipe is only a few minutes.
