To the cavity of your chicken, you’ll place about a teaspoon of the seasoning mix along with ½ a lemon and 4 garlic cloves. At this point, you can place the chicken in the crockpot on top of the onions. In a small mixing bowl, you’ll then want to either add melted butter or microwave the butter in the bowl until it’s melted. To this, you’ll add the juice of the other ½ of the lemon with the liquid smoke and the remaining seasoning mix. You can either pour this mixture evenly over the chicken or can brush it onto the chicken.

Crockpot Pulled Chicken with Onions
We use a whole chicken to make this crockpot pulled chicken with onions! This creates amazingly juicy and delicious chicken!
Ingredients
- 2 teaspoons salt
- 1 teaspoon paprika
- 1 teaspoon pepper
- 1 teaspoon poultry seasoning
- Avocado oil spray
- 1 medium onion, sliced
- 1 whole chicken (5-7 pounds)
- 1 lemon, divided
- 4 garlic cloves, peeled
- 3 tablespoons butter, melted
- 1 tablespoon liquid smoke
Instructions
1. In a small mixing bowl, add salt, paprika, pepper, and poultry seasoning . Stir to combine and set aside.
2. Spray inside of crockpot with avocado oil spray.
3. Place sliced onions evenly onto bottom of crockpot.
4. If necessary remove giblets from chicken. Place ½ lemon and garlic cloves into cavity of chicken. Sprinkle 1 teaspoon of seasoning into chicken cavity.
5. Place chicken, into crockpot on top of onions, breast side up.
6. In a small mixing bowl add melted butter, liquid smoke, and remaining seasoning. Brush or pour evenly over chicken.
7. Cook on low for 3-4 hours or on high 8 hours, or until chicken reaches 165 degrees.
8. Remove chicken. Shred meat with two forks, discarding skin and bones.
9. Cut up onions and add to shredded chicken. If desired, add some of the drippings to the shredded chicken.
