Let’s talk about giblets!
For this gravy, we’re using turkey giblets. Giblets refer to the gizzard, heart, liver, and neck of the turkey and they usually come packaged inside the cavity of the turkey. When you buy a whole chicken, it may or may not come with giblets. You may also find turkey giblets sold separately. Growing up, we always went to my grandma’s house for Thanksgiving, and it was a big family gathering. Family would bring sides and desserts, but grandma always made the turkey, a ham, an amazing sausage called kalberwurst, the mashed potatoes and gravy, and the stuffing. She cooked the giblets alongside the turkey and her favorite was the neck, which appropriately always ended up on her plate! For our giblet gravy we’re cooking all the giblets to achieve amazing flavor. But I don’t chop and add the liver to my gravy. You certainly can if you’d like.
What other ingredients go into this keto giblet gravy?
We’re sauteing our giblets with chopped carrots, celery, and onion for some great added flavor. I used both butter and avocado oil to saute these in. After sauteing this mixture, we add chicken broth, water, chopped garlic, parsley, a bay leaf, salt, and pepper. These also add an amazing depth of flavor to our gravy, especially since they simmer together and the flavors intensify. After removing and chopping the giblets, we strain and discard the solids from the gravy mixture. I was left with 2 cups of liquid. At this point you have a couple of options. You can add 1½ additional cups of chicken broth to the gravy. You can also use your turkey drippings or a combination of broth and drippings to equal 1½ cups. For our thickener, we’re using xanthan gum. Last, to give our gravy even more richness, we add a little heavy whipping cream.

This is an easy gravy to make, but I do have a few tips for making it! First, while sauteing the giblets, you’ll want to turn them every 5-10 minutes. After adding the veggies and continuing to saute, you’ll want to keep an eye on your giblets and can turn down the heat a little if they’re browning too quickly. Next, after adding the next set of ingredients you’ll want to let the mixture simmer lightly for 1½ to 2 hours. You can simmer this mixture for a longer amount of time, but you may have to add more water or broth while it simmers. After straining and discarding the solids, you’ll want to have about 2 cups of liquid. When adding the xanthan gum, I recommend vigorously whisking it in to avoid having any lumps. Last, after adding the heavy whipping cream, you can add more salt to taste.

Keto Giblet Gravy
This keto giblet gravy is incredibly rich and flavorful! It will be an awesome addition to your favorite holiday meals!
Ingredients
- 2 tablespoons butter
- 1 tablespoon avocado oil
- Giblets (from a whole turkey)
- 2 medium carrots, chopped
- 2 medium celery stalks, chopped
- ½ medium onion, chopped
- 5 cups chicken broth, divided
- 3 cups water
- 2 garlic cloves, chopped
- 2 tablespoons fresh chopped parsley
- 1 bay leaf
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon xanthan gum
- ½ cup heavy whipping cream
Instructions
1. In a large skillet, over medium heat, add butter and avocado oil. When skillet is hot, add giblets. Saute 30 minutes, turning every 5-10 minutes.
2. Add carrots, celery and onion. Saute for an additional 30 minutes, stirring vegetables and turning giblets every 5-10 minutes.
3. Move giblets to side of pan. Add ½ cup chicken broth to skillet. Increase heat to high. Stir and scrape bottom of pan to deglaze pan.
4. Add 3 cups chicken broth, 3 cups water, garlic, parsley, bay leaf, salt, and pepper. Bring to a boil. Reduce heat to low, partially cover, and simmer for 1½-2 hours.
5. Remove giblets and discard liver. Chop remaining giblets and neck meat into small pieces. Set aside.
6. Strain solids from broth and discard solids. Add liquid back to skillet. Add 1½ cups chicken broth. Alternately, you can add 1½ cups of turkey drippings or a combination of drippings and broth to equal 1½ cups. Over high heat, bring mixture to a boil.
7. Sprinkle xanthan gum over mixture and whisk in to combine. Cook for 2-3 minutes, or until mixture starts to thicken.
8. Add heavy whipping cream and chopped giblets to skillet. Simmer on medium high heat for 5 minutes, or until gravy is thickened and heated through.
