Ok, I have to admit that while I love nuts, I rarely add them to other dishes such as brownies, fudge, or salads. But, man oh man, I love them in this cranberry salad. I wanted to add some texture other than what the chopped cranberries bring to the salad, and the spiced nuts were the perfect choice. To make the nuts, you’ll simply toss your pecans in a mixture of melted butter, keto brown and granulated sugar, and cinnamon and nutmeg. They only need about 8-10 minutes to bake and get nicely browned. I put 1 cup of the nuts in a plastic bag and then used a rolling pin to crush them and then added them to the salad. Alternately, you can chop your nuts if you’d like. For the remaining ½ cup of pecans, you can leave them whole or chop them to top your salad with.

Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape.

Ingredients
For the spiced pecans:
- 2 tablespoons butter, melted
- 1 tablespoon brown sugar substitute (Swerve)
- 1 tablespoon granulated sugar (Swerve)
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1½ cups pecans
For the cranberry salad:
- 12 ounces fresh cranberries
- 1 cup powdered sugar substitute (Swerve)
- 1½ cup heavy whipping cream
- 1 teaspoon vanilla
Instructions
For the spiced pecans:
1. Pre-heat oven to 350 degrees. Line a large rimmed baking sheet with parchment paper. Set aside.
2. In a medium mixing bowl, add melted butter, brown and granulated sugar, cinnamon, and nutmeg. Stir to combine.
3. Add pecans and stir to completely coat nuts in spice mixture.
4. Bake for 8-10 minutes or until browned, stirring at the halfway point. Allow nuts to cool. Chop 1 cup of nuts and set remaining ½ cup aside.
For the cranberry salad:
1. While the nuts are baking, chop cranberries in a food processor or blender until finely chopped but not mushy. Add chopped cranberries and powdered sugar to a small mixing bowl. Stir to combine and set aside.
2. Chill a medium mixing bowl and beaters in the freezer 15-20 minutes prior to using. To chilled bowl, add heavy whipping cream and vanilla. Beat until stiff peaks form.
3. Add cranberries and stir to combine. Add chopped pecans and stir to combine. Serve immediately or refrigerate until ready to serve.
4. When serving, top cranberry salad with reserved spiced pecans, either kept whole or chopped.
