My family loves deviled eggs, and these keto tarragon deviled eggs were a big hit at my house! The addition of fresh tarragon gives these eggs an awesome burst of flavor. They’re perfect for parties, get togethers, and potlucks and will disappear quickly every time you serve them! Enjoy!

Eggs provide us with calcium, choline, folate, lutein, phosphorus, potassium, selenium, and zinc. They also contain vitamin A, B, D, E, and K and are a good source of both protein and good fat. Eggs can be prepared in so many delicious ways and for our deviled eggs we’re hard boiling them. I love having hard boiled eggs in the refrigerator because they’re great to add to all kinds of meals or to top salads with. When I make a small batch, I use my Dash rapid egg cooker. But when I make deviled eggs or egg salad, I make a larger batch so it’s easier to boil them on the stovetop. Of course, I do make a few extra to keep in the fridge!
How do I make the filling for these keto tarragon deviled eggs?
After making your hard boiled eggs, you’ll want to cut them lengthwise, remove the yolks and place them in a mixing bowl. You can place the whites on a plate or serving platter. To avoid having a lumpy mixture, you’ll want to use a fork to mash your yolks into very small pieces. To them, you’ll add keto mayonnaise, dill pickle juice, fresh chopped tarragon, yellow mustard, salt, and pepper. I used the Chosen Foods brand avocado oil mayonnaise for my deviled eggs. When buying mayo, you’ll want to make sure there is no added sugar or oils you don’t want. I just add dill pickle juice, but you can add some finely chopped pickles or some unsweetened dill relish if you’d like. Another substitute you can make is to use Dijon mustard in place of the yellow mustard if you’d prefer.

You have some great options for serving these eggs! I love to sprinkle my deviled eggs with paprika, but you can serve them plain as well, or you can sprinkle half with paprika and leave the other half plain. These eggs make for a perfect appetizer or snack option. They’re also perfect for all kinds of barbecues, parties, and get togethers. Keto Tarragon Deviled Eggs

Ingredients
- 16 hard boiled eggs
- 1 cup keto mayonnaise
- 1 tablespoon dill pickle juice
- 1 tablespoon fresh chopped tarragon
- 1 tablespoon yellow mustard
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Optional: sprinkle with paprika
Instructions
1. Peel hard boiled eggs. Slice eggs in half, lengthwise. In a medium mixing bowl, add egg yolks. Place egg whites onto a serving platter or plate.
2. Use a fork to mash the yolks into fine crumbles. Add mayonnaise, dill pickle juice, tarragon, mustard, salt, and pepper. Stir to combine.
3. Use a spoon or piping bag to fill egg whites with egg yolk mixture.
4. If desired, sprinkle paprika over eggs.
5. Serve immediately or store, covered, in the refrigerator until ready to serve.
