This low carb tomato, olive, and cheese salad has quickly become one of our family favorites! I had some Roma tomatoes that needed to be used and I wanted to make something other than salsa with them. I also wanted to make a quick and easy salad to go with our dinner and that’s how this salad came to be. We all absolutely love this salad and it’s been added to our favorites list! I hope you’ll enjoy it as much as we do!

I love making salads of all kinds. In fact, salads are one of my favorite foods. For this salad, we combine Roma tomatoes, black olives, colby jack cheese, and fresh chopped parsley. Roma tomatoes, also know as plum tomatoes, are firm in their texture and have very small seeds so they work perfectly for this salad. If you’d like, you could also use vine ripened tomatoes for your salad. I used black olives for our salad, but Kalamata or green olives or a combination of different olives could also be used. For cheese, I used colby jack, but some other great options include cheddar, gouda, gruyere, Monterey jack, mozzarella, provolone, or Swiss cheese. We then add some fresh chopped parsley which adds amazing color and flavor to our salad.
How do I make the vinaigrette dressing for this low carb tomato, olive, and cheese salad?
The dressing for this salad is amazingly easy to make and it’s also amazingly delicious! I use different ratios of oil to vinegar for various salads I make; but for this vinaigrette, we’re using what’s usually known as the standard ratio, which is 3 parts oil to 1 part vinegar. You’ll oftentimes see recipes which state something to the effect of, “use a high quality olive oil.” Especially for vinaigrettes I agree with that, but that doesn’t necessarily mean it has to be expensive. I love Kirkland’s organic extra virgin olive oil and that’s what I used for my vinaigrette. I also love champagne vinegar, but you can substitute with white wine vinegar if you’d like. Our salad ingredients have such amazing flavor, they really don’t need too much help, so we simply add oregano, salt, and pepper to our vinaigrette!

You have some great options for serving this salad. It’s a super choice for an appetizer salad or a side salad. I love making appetizers for parties, for holiday meals, and sometimes just for “family hanging out together on Sunday” special days!😊This salad fits perfectly when served with other appetizers. As a side salad, this salad pairs nicely with all kinds of dishes. You can serve this with any kind of meat and with everything from burgers and grilled chicken to roasts and seafood mains. Everyday meals such as meatloaf, fajitas, sausage and peppers, and pulled chicken or pulled pork are also great options to serve this salad with. You can also serve this salad with a keto soup to make a fun soup and salad meal.

Ingredients
- 6 Roma tomatoes, cut into bite sized pieces
- 1 (6 ounce) can black olives, drained
- 6 ounces colby jack cheese, cubed
- ½ cup fresh chopped parsley
- 3 tablespoons olive oil
- 1 tablespoon champagne vinegar
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Add tomatoes, olives, cheese, and parsley to a medium mixing bowl. Toss to combine. Set aside.
2. In a small mixing bowl, add olive oil, champagne vinegar, oregano, salt, and pepper. Stir or whisk to combine.
3. Pour dressing over salad and toss to combine.
4. Refrigerate salad until ready to serve.
