When you want a sweet and awesomely delicious treat, these quick and easy keto chocolate chip cheesecake bites will always satisfy! These cheesecake bites take just 10 minutes to make and are stored in the refrigerator, so you can grab one or two anytime you’d like. Enjoy!
Let’s talk about our ingredients!
We combine just a few simple yet delicious ingredients to make these cheesecake bites. To create the creamy base for these treats, we combine cream cheese and butter. Cream cheese is a great keto food choice as it is relatively low in carbs and is a great source of fat. It’s also creamy, tangy, and delicious! To add just the right amount of sweetness, I used a combination of keto powdered sugar and keto brown sugar. For both, I used the Swerve brand. These sugars contain zero calories and zero net carbs, and they’re similar in sweetness to regular sugar. A little vanilla and salt bring great flavor and enhance all the other flavors in these cheesecake bites. Last, we add keto chocolate chips!
What kind of chocolate chips should I use to make these keto chocolate chip cheesecake bites?
You have some great options for your choice of chocolate chips. I used Lily’s semi-sweet chocolate chips for my cheesecake bites. Lily’s also make dark, white, and milk chocolate chips. They also make some fun flavors such as butterscotch and pumpkin spice. Another of my favorite brands is Bake Believe, and they also make dark, semi-sweet, milk, and white chocolate chips. There are a number of brands of keto chocolate chips, and you can also use your favorite to make these sweet treats. I kept my chocolate chips whole, but you can chop yours if you’d like smaller pieces in your cheesecake bites. Another option is to use a keto bar of chocolate and chop it to use in these treats. I used ½ cup keto chocolate chips for my cheesecake bites, but you can add even more if you’d like.
How do I make these keto chocolate chip cheesecake bites?
These bites are amazingly quick and easy to make, but there are a few things you can do so yours will turn out perfectly! First, you’ll want to make sure both your cream cheese and butter are softened before using. This will help ensure your bites will turn out incredibly smooth and creamy, and not lumpy. Next, I like to beat my cream cheese and butter together first. Then, once they’re combined and the mixture is smooth, I add the sugars, vanilla, and salt, then beat again until everything is combined. You can then add your chocolate chips and either beat them in or stir them in. I think the easiest way to form these treats into the perfect shape is to use a cookie scoop, but you can use a spoon to make yours as well. You can eat these right away or refrigerate them until ready to serve.
