My husband enjoys smoothies for breakfast, so I like to make a batch and store it in a pitcher in the refrigerator so he can have one whenever he likes. There are so many awesome keto options for making smoothies. You can use unsweetened almond milk or unsweetened coconut milk as your base. Sometimes I’ll decrease the amount of milk by 1 cup and replace it with an 8 ounce block of cream cheese. For fruit, most any berry or combination of berries can be used. A good thing to know is that blueberries have quite a few more net carbs in them than most other berries. You can also chose other additions to your smoothies, such as avocados and keto chocolate chips if you’d like!

This is an incredibly easy drink to make! First, it’s important to know we’re using two different kinds of coconut milk. We’re using 3 cups of unsweetened coconut milk, the kind that comes from a carton. This is basically coconut cream that has water added to it to make it drinkable. Then we add a can of coconut milk, which adds incredible richness to our smoothie. For my sugar, I used the Swerve brand. It’s similar in sweetness to regular sugar. You can adjust the amount of added sugar to achieve your desired sweetness level. You can use coconut flakes or shredded coconut, just make sure it’s unsweetened. To make this smoothie, you’ll simply add all your ingredients to a blender and blend until smooth. I didn’t strain my mixture so it had tiny pieces of raspberry seeds in it, but you can certainly strain yours if you’d like.
How do I make homemade keto whipped cream to top my keto coconut raspberry smoothie with?
It’s incredibly easy to make your own keto whipped cream. And once you make it, you’ll never want anything else as it’s superior in both its taste and texture! I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll then want to beat this mixture until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can also easily double this recipe if you’d like. Another fun thing to do is to experiment with using different extract flavors to change the flavor of your whipped cream. You’ll want to store any leftover whipped cream, in a covered container, in the refrigerator.

- 12 ounces raspberries
- ½ cup granulated sugar substitute (Swerve)
