You have some great options for keto chocolate chips! For my clusters, I used semi-sweet chocolate chips and used the Lily’s brand. Lily’s combines erythritol and stevia extract which results in them being a delicious and low net carb food! I think semi-sweet chocolate brings the perfect amount of sweetness to these clusters. You can absolutely substitute with your favorite brand of keto chocolate chips if you’d like. I also frequently use Bake Believe chocolate chips. You can also use dark chocolate keto chocolate chips if you’d prefer. And if you want a sweeter option, you could substitute with keto milk chocolate chips. The addition of a little coconut oil helps the chocolate melt smoothly and creates the perfectly smooth texture! I used unrefined coconut oil because it’s less processed and has a stronger coconut flavor.
What other ingredients go into these chocolate coconut keto peanut clusters?
These clusters contain just a few ingredients, but they combine to make incredibly sweet and flavorful treats. Once our chocolate chips and coconut oil are melted, we add coconut extract, peanuts, and unsweetened coconut flakes. I used roasted and salted peanuts for my clusters. The salt really enhances the flavor of the chocolate. I added just a little coconut extract to bring additional coconut flavor to these clusters. For the coconut, I used unsweetened coconut flakes for the flavor and texture this brings. You can use shredded coconut if you’d like smaller pieces of coconut in your clusters. Either way, you’ll want to make sure you’re using unsweetened. The last ingredient for these clusters, coarse salt to sprinkle over the clusters, is optional but I like mine with the extra salt! You can make half your clusters with and half without to see which you prefer!

In place of the semi-sweet chips, you can use milk or dark chocolate chips if you’d like. You can choose to use either coconut flakes or shredded coconut for your clusters. Chocolate Coconut Keto Peanut Clusters
Chocolate coconut keto peanut clusters are amazingly delicious and amazingly low carb! Enjoy these as a snack or dessert option!
Ingredients
- 1½ cups keto semi-sweet chocolate chips
- 1 tablespoon coconut oil
- ½ teaspoon coconut extract
- 2¼ cups peanuts
- ⅓ cup unsweetened coconut flakes
- Optional: Coarse salt for topping
Instructions
1. Line two 13x9 inch pans with parchment paper. Set aside.
2. In a medium microwave safe mixing bowl, add chocolate chips and coconut oil.
3. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1-1½ minutes total). Add coconut extract and stir to combine.
4. Add peanuts and coconut flakes, Stir until peanuts and coconut flakes are completely coated with chocolate.
5. Drop by spoonfuls onto prepared pans. Sprinkle with coarse salt if desired.
6. Freeze for 30-45 minutes or until completely set.
7. Serve immediately or store, covered, in the refrigerator until ready to serve.
