I love making my own seasoning mixes and experimenting with different herbs and spices to make them! When you make your own mixes, you can adjust the ingredients to your taste preference. You can make them just as salty and spicy as you’d like! Also, making your own mixes ensures there are no added ingredients found in most packaged seasoning mixes that you don’t want. For my taco seasoning, I combine chili powder, cumin, garlic powder, paprika, salt, onion powder, pepper, and oregano. I used regular chili powder, but you can substitute with ancho, chipotle, or dark chili powder if you’d like. If you want to add a smoky element, you could use smoked paprika in place of the regular paprika. This is a fairly mild seasoning mix. If you want to add more heat, you could add some ground cayenne pepper to your seasoning mix!
What other ingredients go into this keto chicken taco casserole?
This is a quick and easy casserole to make, but it turns out so creamy, cheesy, and flavorful! I like to mix my casserole ingredients together in a big mixing bowl, then transfer the mixture to a baking dish. To our mixing bowl, we combine cooked and chopped chicken, the taco seasoning, one can of Rotel diced tomatoes and green chilies, sour cream, and ½ the shredded cheese. For my chicken, I had boiled a whole chicken, so I used light and dark meat. Alternately, you can use all white or all dark meat for yours. A quick and easy option is to use a rotisserie chicken. I used regular Rotel which has a nice spice level to it. You can use the mild or the hot version if you’d prefer. After transferring this mixture to the baking dish, you’ll then sprinkle the remaining shredded cheese over the casserole.
What can I serve with this keto chicken taco casserole?
This is a filling casserole that makes for a meal in itself, but you have some great low carb options you can add to this dish. I like to top mine with some chopped green onions. You can also top yours with avocado slices, diced tomatoes, salsa, or sour cream. I find this casserole pairs perfectly with a green salad. A Caesar salad is a nice choice too! If you’d like you could even serve it with coleslaw. You can also serve this casserole with a side of cilantro lime cauliflower rice, fajita cauliflower rice, or Mexican cauliflower rice. Keto biscuits, cornbread, or English muffins make for a nice addition to this casserole as well. Any cooked low carb vegetable could also be served with this dish!

Ingredients
For the taco seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
For the chicken Casserole
- Avocado oil spray
- 4 cups cooked, chopped chicken
- 1 (10 ounce) can Rotel diced tomatoes & green chilies, drained
- 1 cup sour cream
- 2 cups shredded colby jack cheese, divided
- Optional: top with chopped green onions
Instructions
For the taco seasoning:
1. In a small mixing bowl, add all ingredients.
2. Stir to combine. Set aside.
For the chicken casserole:
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large mixing bowl, add chicken, taco seasoning, Rotel diced tomatoes & chilies, sour cream, and 1 cup of shredded cheese.
3. Place chicken mixture into prepared baking dish. Sprinkle remaining cup of shredded cheese evenly over chicken mixture.
4. Bake for 30 minutes or until heated through.
5. Remove casserole from oven. If desired, broil for 1-2 minutes or until top is golden brown.
