I absolutely love making salads, and this keto marinated pepper, tomato, and onion salad is a delightfully delicious one! I had some extra bell peppers I needed to use up and wanted to make something other than fajitas or a casserole with them. So I decided a fun new salad was in order! My grandma used to make marinated salads and when I make them, I always think about her and all the amazing memories I have of her and her awesome recipes!

I’m always amazed at how delicious a fresh vegetable salad is. Growing up on a farm in Wisconsin, we had a huge garden, so fresh vegetables were a staple in our house. I also remember going out to the garden, picking strawberries, and eating them right there in the garden! For this salad, we’re combining bell peppers, tomatoes, onion, and fresh chopped parsley. I used a green pepper, a red pepper, and a yellow pepper for my salad. As peppers ripen, they get sweeter so the red and yellow pepper are sweeter than the green. For tomatoes, I used Roma, but vine ripened would work great too. For your onion, you can use a red, yellow, or white onion for this salad. Fresh parsley is one of my favorite things to add to all kinds of dishes as it adds amazing color and flavor to them.
How do I make the marinade for this keto marinated pepper, tomato, and onion salad?
The marinade for this salad is so easy to make but results in an awesomely flavorful salad. The vinegar in this marinade is what takes me right back to grandma’s kitchen! She made her salads from scratch, and I think she had the recipes in her head. So I’ve tried to recreate so many of her dishes by trial and error, while also making them low carb and keto. For this marinade, we combine apple cider vinegar, keto granulated sugar, water, salt, and pepper. For my sugar, I used the Swerve brand granulated sugar. It contains zero calories and zero net carbs. It’s also delicious and its sweetness is comparable to regular sugar. To make this marinade, you simply add all the ingredients to a small mixing bowl and stir or whisk together until most of the sugar is dissolved.
Can I make any changes and substitutions to this keto marinated pepper, tomato, and onion salad?
This salad is very versatile, and you have some great options to change up the ingredients to make this salad your own! You can use the ingredients, as listed, and slice the peppers and onion instead of chopping them. If you’d like to add a little heat to your salad, you could add some diced or minced jalapeno. Toss in a few minced garlic cloves and you’ll add a nice garlicky element to your salad. You could also add some chopped cucumbers or some chopped green onions as well. For seasoning variations, you could add some dill or even Italian seasoning. Another fun change up would be to add fresh basil or cilantro in place of or in addition to the parsley. You can also add some cheese to this salad. Fresh mozzarella balls or feta cheese would be perfect!

This keto marinated pepper, tomato, and onion salad is an incredibly fresh and flavorful dish! It’s perfect for parties and potlucks, and will make any meal extra special!
Ingredients
- 3 bell peppers, cut into bite sized pieces
- 4 Roma tomatoes, cut into wedges
- 1 small onion, roughly chopped
- ¼ cup fresh chopped parsley
- 1 cup apple cider vinegar
- ⅓ cup granulated sugar substitute (Swerve)
- ⅓ cup water
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a large mixing bowl, add peppers, tomatoes, onions, and parsley. Stir to combine.
2. In a small mixing bowl, add remaining ingredients. Stir or whisk until sugar is mostly dissolved.
3. Pour marinade over vegetables. Toss to combine.
4. Refrigerate for 2 hours or, if possible, overnight. Stir a few times while marinating.
