My family always enjoys beef, and I was excited to see chuck roast on sale, so I bought two of them. For the first, I made oven baked pot roast with gravy and made this crockpot balsamic beef with the second chuck roast. Chuck roast is a delicious cut that’s well marbled with fat. I don’t trim any fat from my roast as it adds excellent flavor to the meat. Chuck roast is so often used to make pot roast, you may see it in the store labeled, “pot roast.” For our seasonings, we simply combine garlic powder, onion powder, salt, and pepper and season our roast evenly with them. One of the great things about this dish is that we don’t have to sear the meat, so our prep time is minimal!
How do I make this keto crockpot balsamic beef?
After seasoning the beef and placing it in the crockpot, we combine a delicious mixture of beef broth, balsamic vinegar, and tamari and pour it into the crockpot. I like to cook this in the crockpot on low for 7-8 hours. You can also cook it on high for 4-5 hours. After this time, the beef will be falling apart tender. You’ll then want to remove the roast to a cutting board and shred it with two forks. I sometimes use a fat separator to remove some of the fat from the beef drippings. You can also let the liquid set until the fat rises to the top and use a spoon to remove some of it. You can also skip this step altogether if you’d prefer. At this point, you can add all of the liquid or as much of it as you’d like to the shredded beef.

You have some great low carb options for serving this dish. It’s delicious, eaten just as it is, out of a bowl. I love salads and turn most everything into a big salad. This shredded beef can be used to make an awesome salad, using your favorite lettuce or spinach. You can then top it with things like shredded cheese, diced or sliced tomatoes, sour cream, or your favorite dressing! You can use this shredded beef as the filling for lettuce wraps or to make a keto sandwich. Keto bread, chaffles, or English muffins are all great choices. If you’d like, you can also top your sandwich with cheese and broil it just until the cheese is melted and slightly browned. Yum. Ingredients
- 3 pounds boneless chuck roast
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup beef broth
- ½ cup balsamic vinegar
- 1 tablespoon tamari
Instructions
1. Season chuck roast evenly with garlic powder, onion powder, salt, and pepper. Place into crockpot.
2. Combine beef broth, balsamic vinegar, and tamari. Pour into crockpot.
3. Cook on low for 7-8 hours or on high for 4-5 hours.
4. Remove roast and shred with 2 forks. Strain fat from drippings if desired. Ladle as much of the drippings into shredded beef as desired.
