You can also use ground beef or even ground pork for this dish if you’d prefer. This dish also reheats well either in the microwave or on the stove so it’s a great choice for leftovers. There are so many low carb vegetable options, and cabbage and green beans are two great ones. Both are low in calories and low in carbs. They also both provide us with important nutrients. One cup of chopped green cabbage contains about 3 net grams of carbs, and one cup of green beans comes in at about 4 net grams. For a fun comparison, one cup of chopped red cabbage contains approximately 5 net grams of carbs. Cabbage and green beans are also both high in fiber. I roughly chopped my cabbage, but alternately, you can shred your cabbage if you’d like. For the beans, I used fresh green beans and simply cut them into equal sized pieces. If you’d rather, you can use frozen green beans. Since they won’t take as long to cook, you’ll want to add them during the last 20 minutes or so of cooking.
What are the other main ingredients added to this ground turkey with cabbage and green beans?
I used 93% lean ground turkey for my dish. You could use ground beef or even ground pork or Italian sausage if you’d prefer. You’ll just want to drain any excess grease from the meat. To add awesome flavor, we add some diced onions to this dish. I like to saute mine in butter and olive oil. We also add extra butter to this dish which adds amazing richness! You can use either regular diced tomatoes or petite diced tomatoes depending on if you want larger or smaller chunks of tomatoes. You will want to add the whole can, juice and all. For a little extra flavor, we simply add tamari, Italian seasoning, and garlic powder. I recommend you give your dish a taste and add additional salt and pepper if you’d like.

This dish can serve as a complete meal in itself, but you also have some great low carb options to serve with it. Although I serve this dish as is, you can also add some cheese or top your dish with some shredded cheese or even with a dollop of sour cream. You can serve this with a green salad complete with all your favorite toppings. A Caesar salad is one of my favorites! You can also serve this dish with some keto biscuits, chaffles, cornbread, or English muffins. Another fun idea is to serve some keto appetizers, then serve this dish as your main. Of course, you can’t go wrong ending your meal with an awesome and decadent keto dessert!

Ingredients
- 1½ pounds ground turkey
- ½ teaspoon salt
- ½ teaspoon pepper
- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 large head green cabbage, chopped
- 1 pound fresh green beans, trimmed and cut into pieces
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons tamari
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
Instructions
1. In a large skillet, over medium high heat, add ground turkey, salt, and pepper. Cook until meat is no longer pink, breaking it up into small pieces as it cooks. Drain grease if necessary.
2. In a large stockpot, over medium high heat, saute onions in 1 tablespoon butter and olive oil for 5-7 minutes, or until onions start to soften.
3. To stockpot, add ground turkey, remaining 3 tablespoons butter, and remaining ingredients. Stir to combine.
4. Decrease heat to medium, cover, and cook for 35-45 minutes, or until cabbage is tender, stirring every 15 minutes.
