I love making easy everyday meals for my family, and this keto creamy Rotel chicken is one of our new favorites! This is a creamy, cheesy dish that is true comfort food. You can serve this just as it is or can top some cauliflower rice with it. I hope you’ll enjoy this chicken as much as my family and I do!
Let’s talk about our chicken!
Although we’re going to add an awesome sauce, the amazing flavor for this dish starts with the chicken! We’re making our own spice mixture for this chicken. We combine chili powder, garlic powder, onion powder, salt, cumin, and pepper for our spice rub. These flavors help to create incredibly delicious chicken. For our chicken, we’re using chicken breasts. You can cut them into whatever sized cubes you’d like for your dish. We simply toss the chicken with the spice mixture to coat it well. Then we saute the chicken in a mixture of butter and olive oil just until it’s cooked through. This is a lot of chicken, so you’ll have to saute your chicken in batches as it won’t all fit into your skillet. I used a large skillet and was able to cook half the chicken, remove it to a plate, then cook the remaining half.
How do I make the sauce for this keto creamy Rotel chicken?
The sauce for this dish comes together quickly and easily, but it’s amazingly creamy, cheesy, and delicious. Once we’ve removed all the chicken to a plate, we use the same skillet we cooked it in to make our sauce. To the skillet, we add a can of undrained Rotel tomatoes and diced green chilies, sour cream, heavy whipping cream, and paprika. This mixture is then whisked together and cooked until it’s bubbly and heated through. Then comes the cheese. 2 cups of shredded cheese complete this sauce perfectly. I recommend you buy a block of cheese and shred it yourself as it melts the best! After the cheese is melted, you simply add your chicken to the sauce and cook until the chicken is heated through. This dish can be served as is in a bowl, or you can serve it over some cauliflower rice.
Can I adjust the heat level in this keto creamy Rotel chicken?
As written, this dish has a fairly mild spice level. But you have some great options for adjusting this to meet your taste preference. First, you can use chipotle chili powder in place of the regular if you’d like to add a little more heat. Next, you can adjust the heat level depending on the kind of Rotel you use. You can use mild if you want less heat, original if you want a little kick of heat, or the hot kind for increased heat. If you want to increase the spice level even more, you can add some diced jalapenos to your sauce. A good thing to know is that the majority of heat from jalapenos is in their seeds and membranes, so if you add these, you’ll add more heat. Last, you can also up your heat level by using pepper jack cheese in place of the cheddar.

Ingredients
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon pepper
- 3 pounds chicken breasts, cubed
- 2 tablespoons butter, divided
- 2 tablespoons olive oil, divided
- 1 (10 ounce) can Rotel diced tomatoes & green chilies, undrained
- 1 cup sour cream
- ½ cup heavy whipping cream
- 1 teaspoon paprika
- 2 cups shredded cheddar cheese
- Optional: top with chopped green onions or serve over cauliflower rice
Instructions
1. In a small bowl, add chili powder, garlic powder, onion powder, salt, cumin, and pepper. Stir to combine. Set aside.
2. Add cubed chicken to a large mixing bowl. Add seasoning and toss to coat chicken pieces in seasoning.
3. In a large skillet, over medium high heat, add 1 tablespoon butter and 1 tablespoon olive oil. Once hot, add ½ of cubed chicken. Saute until just cooked through. Remove to a plate.
4. Add remaining 1 tablespoon butter and 1 tablespoon olive oil. Saute remaining cubed chicken until just cooked through. Remove to plate.
5. To skillet add Rotel diced tomatoes & green chilies, sour cream, heavy whipping cream, and paprika. Stir or whisk ingredients together and cook until mixture is heated through.
6. Add shredded cheese and stir or whisk until cheese is melted.
7. Add cooked chicken to skillet and cook until chicken is heated through.
8. If desired, serve chicken topped with chopped green onions or serve over cauliflower rice.
