When you want a creamy, flavorful, and filling soup, this ham bone cauliflower rice soup is a perfect choice. This soup is filled with ham, veggies, and an amazingly delicious and creamy broth! It also is a big batch soup, so you can serve it to a crowd or can serve it the next day for leftovers!

We add an awesome combination of vegetables to this soup, which brings both great flavor and texture to the soup. We start with sauteing diced green and red peppers with onions. You can use any color or color combination of bell peppers for your soup. I used a yellow onion, but you can use a white or red onion for your soup if you’d prefer. Then we add a couple of minced garlic cloves. I add these to the mix during the last minute of sauteing, so the garlic won’t burn. You can add even more garlic if you’d like. The last two vegetables we add to this soup are riced cauliflower and chopped green cabbage. I actually prefer frozen riced cauliflower to fresh, so that’s what I used; but either is a great choice. You can chop or shred your cabbage for this soup.

This is pretty much a no-fail soup, but I do have a few tips for making it. First, when cooking your hambone, you’ll want to let the mixture simmer until the ham can easily be removed from the bone. This should take about 1-1½ hours, but if you simmer over a higher heat, it might be done sooner. You’ll just want to make sure between the meat from your ham bone and with the additional cooked chopped ham, you end up with about 4 cups of ham to add to this soup. Next, depending on whether you use fresh or frozen riced cauliflower, the time it will take to simmer until tender may vary by a few minutes. Last, I added a little xanthan gum to thicken my soup. You can omit this ingredient if you’d like, but your soup will be a bit thinner if you do.
How can I serve this ham bone cauliflower rice soup?
This is a very filling soup, and it can be served as a meal in itself. You can also top your soup with some shredded cheese or even with some chopped chives or chopped green onions. A great option is to serve this soup with a nice green salad. A Caesar salad is always a great choice. You can also serve this soup with some keto biscuits, chaffles, cornbread, or English muffins. If serving this soup as a side dish instead of as a main dish soup, you have some great options. You can serve a bowl of this soup with burgers, keto sandwiches, or lettuce wraps. Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- ½ medium green pepper, diced
- ½ medium red pepper, diced
- ½ small onion, diced
- 2 garlic cloves, minced
- 1 meaty ham bone
- 8 cups chicken broth
- 2 cups water
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon smoked paprika
- 3 cups chopped ham
- 16 ounces riced cauliflower
- 5 cups chopped green cabbage
- 1 cup heavy whipping cream
- 1 teaspoon xanthan gum
- Optional: top with shredded cheese
Instructions
1. In a large stockpot, over medium high heat, saute peppers and onions in butter and olive oil for 7-8 minutes, or until vegetables start to soften. Add garlic during last minute.
2. Add ham bone, chicken broth, water, basil, oregano, parsley, and smoked paprika.
3. Increase heat to high and bring to a boil. Decrease heat and simmer for 1-1½ hours. Remove hambone and chop meat from the bone. Discard bone and add chopped meat to stockpot.
4. Add 3 cups of chopped ham, or enough to equal 4 cups total ham, to stockpot along with riced cauliflower, cabbage, and heavy whipping cream.
5. Simmer for 10-15 minutes, or until cauliflower rice and cabbage are tender.
6. Sprinkle xanthan gum over soup and whisk in to combine. Simmer for 2-3 minutes to allow soup to thicken.
7. Top soup with shredded cheese if desired.
