Ingredients
- 1 meaty ham bone
- ½ medium onion, chopped
- 4 celery stalks, chopped
- 4 garlic cloves, chopped
- 8 cups chicken broth
- 4 cups water
- 3 cups chopped ham
- 16 ounces asparagus, trimmed and cut into pieces
- 2 (14.5 ounce) cans diced tomatoes
- 1 tablespoon Italian seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
1. In a large stockpot, add ham bone, onions, celery, and garlic. Pour chicken broth and water into stockpot.
2. Bring to a boil over high heat. Decrease heat and simmer 1-1½ hours.
3. Remove ham bone and chop meat from the bone. Discard bone and add chopped meat to stockpot.
4. Add 3 additional cups of chopped ham, asparagus, diced tomatoes, Italian seasoning, and cumin. Stir to combine.
5. Bring to a boil over high heat. Decrease heat and simmer 10-15 minutes, or until asparagus is tender. Add salt and pepper to taste.
