We combine just a few simple yet incredibly flavorful ingredients to make these roll ups. I used colby jack cheese slices for my roll ups, but you have some awesome options for substitutions. You can use any good melting cheese slices for these roll ups. Some great options include cheddar, anything ranging from mild to sharp, colby, mozzarella, or provolone. I sprinkled about ½ teaspoon of Italian seasoning evenly over the cheese slices, but you can use even more if you’d prefer. For the pepperoni, I used sugar free pepperoni slices made with a combination of beef and pork. You can use your favorite pepperoni for your roll ups. You can also use turkey pepperoni for these if you’d like.
How do I make these keto pizza roll ups?
These roll ups are incredibly quick and easy to make, but there are a few things you can do to ensure yours will turn out perfectly. First, you’ll definitely want to start by lining your baking sheet with parchment paper. Then, when placing your cheese slices, you’ll want to leave some space between them as they spread out when they melt. Next, when sprinkling the Italian seasoning over your cheese, you’ll just want to sprinkle evenly over all the cheese. You can place your pepperoni slices on top of the cheese in any pattern you’d like. You can also cut your pepperoni in half before placing on top of your cheese slices. You’ll want to bake your roll ups just until the edges of the cheese are nicely browned, then remove them from the oven and allow to set for about two minutes before rolling them up to serve.

You have some great options for the kind of marinara you use. There are some really good keto marinara sauces you can buy at the store. You can use marinara sauce or spaghetti sauce. When buying, you’ll want to check the carb count and also the ingredients to make sure there is no added sugar or other ingredients you don’t want. It’s also incredibly easy to make your own homemade keto marinara. This is the recipe for my go-to homemade marinara:
½ tablespoon olive oil
1 tablespoon finely diced onion
3 ounces tomato paste
1 cup water
1 tablespoon Italian seasoning
½ teaspoon granulated sugar substitute (Swerve)
- In a small saucepan, over medium heat, add oil. Once hot, saute onion until softened, about 4 minutes. Add remaining sauce ingredients and whisk to combine.
- Decrease heat to medium low. Simmer for 15-20 minutes, stirring occasionally.

Ingredients
- 8 slices colby jack cheese
- ½ teaspoon Italian seasoning
- 16 pepperoni slices
- Optional: serve with keto marinara sauce
Instructions
1. Pre-heat oven to 400 degrees. Line a large baking sheet with parchment paper.
2. Place cheese slices onto prepared baking sheet, leaving a little space in between pieces.
3. Sprinkle Italian seasoning evenly over cheese slices.
4. Top each piece of cheese with 2 slices of pepperoni.
5. Bake for 7-8 minutes or until edges of cheese are nicely browned. Let set for 2 minutes before rolling up.
6. Serve with a side of keto marinara sauce, if desired.
