Then we make a quick and easy sour cream gravy using the chicken drippings to complete this dish. This is perfect for everyday and special occasion meals!

The seasoning mix for this chicken is a combination of some of our favorite spices. We combine garlic powder, onion powder, paprika, smoked paprika, salt, and pepper to make this mix. I love paprika and I love smoked paprika even more, so I added them both to this dish. When making chicken, I like to sprinkle some of the seasoning over the bottom of the baking dish. Then when adding the chicken, I press the pieces down a bit to easily season the bottom of the chicken. Then it’s easy to finish because we just sprinkle the remaining seasoning evenly over the top of the chicken.

For your gravy, you can either use all the drippings or can strain the fat from the drippings if you’d prefer.

Ingredients
- Avocado oil spray
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 6 bone-in skin on chicken thighs
- 6 tablespoons butter, cut into 1 tablespoon pieces
- ⅓ cup sour cream
- 2 tablespoons fresh chopped parsley
- 1 tablespoon heavy whipping cream
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a small bowl add garlic powder, onion powder, paprika, smoked paprika, salt, and pepper. Stir to combine.
3. Sprinkle ⅓ seasoning mixture evenly over bottom of baking dish. Place chicken thighs in pan, skin side up, pressing down to season bottom of chicken.
4. Sprinkle remaining seasoning evenly over chicken.
5. Top each piece of chicken with 1 tablespoon of butter.
6. Bake 40-50 minutes, or until chicken reaches 165 degrees.
7. Remove chicken to a plate. Pour drippings into a medium skillet.
8. Add sour cream, parsley, and heavy whipping cream. Stir to combine and heat over medium high heat until gravy is heated through.
Notes
Based on your personal preference, you can strain the fat from your drippings if you'd like before making the gravy.
