Let’s talk about cabbage!
If you’re wondering if cabbage is keto, the answer is, “absolutely!” One cup of chopped green cabbage contains about 3 net grams of carbs. In comparison, one cup of chopped red cabbage contains approximately 5 net grams of carbs. For this dish we’re only using green cabbage. Cabbage is also a low calorie food and is rich in nutrients and a good source of fiber. A great thing about cabbage is that it can be eaten raw or cooked and it’s easy to incorporate it into any number of dishes. Raw, it can be chopped or shredded to make coleslaw and salads. Cabbage can also be boiled, braised, grilled, roasted, sauteed, or steamed. You can make some awesome side dishes using cabbage, and they can be paired with all kinds of meats and keto main dishes. It can also be added to soups or all kinds of casseroles.
How do I make this cheesy green bean cabbage casserole?
This is an incredibly easy dish to make with just a few simple steps. We start by chopping bacon and sauteing it. We don’t discard any of the bacon grease, but instead use it to saute our onions and cabbage in. To save some time, I like to chop my onions and cabbage while my bacon is cooking. I also like to take this time to steam my green beans. You can boil your beans if you’d rather. For the cheese, I recommend buying a block of cheese and grating it yourself. You can then be assured there are no added ingredients, and it melts so much better than pre-shredded cheese. To assemble this casserole, we simply add our cooked bacon, cabbage, and green beans to a large baking dish, then stir in the cheese. You’ll want to bake it until it’s heated through and the cheese is melted.
How can I serve this cheesy green bean cabbage casserole?
You have some great options for serving this casserole. It can be served as a main dish or as a side dish. As a main, you can serve it with a salad. Any green salad using lettuce or spinach would be a good choice. One of our favorites is a Caesar salad. It can also be served with some keto biscuits, chaffles, cornbread, or English muffins. If you’d like to serve this dish as a side, you have many great meal choices. You can serve it with any kind of meat, including beef, chicken, pork, or seafood. It can be served with burgers, keto sandwiches, or lettuce wraps. You can also serve it with dishes such as meatloaf and pulled pork. It would also pair well with steaks and seafood mains.
