Let’s talk about our sausage!
You have quite a variety of options when it comes to the kind of sausage you use for this dish. You can use sausage links or ring sausage, but you’ll want to make sure it’s fully cooked. I don’t always use the same kind of sausage, but I do look for sausage that doesn’t contain added sugar. I recommend checking nutrition labels so you can be assured there are no added ingredients you don’t want in your sausage and that the carb count is low. You can use beef, chicken, pork, or turkey sausage or a sausage which contains a combination of meats. Some other great options are to use kielbasa or cooked bratwurst. If you want to add some spice, you can use a hot sausage such as hot andouille, Cajun andouille, or hot links.
How do I make this creamy sausage and sauerkraut skillet?
This is a quick and easy dish to make, but there are a few things you can do to ensure it comes out perfectly! First, you’ll want to use a large skillet to help ensure your sausage won’t overlap in the pan so it can get nicely browned on both sides. I heated my sausage and onions over medium high heat; but if your onions start to brown too quickly, you can decrease the heat a little. Since garlic can easily burn, I recommend adding it to your sausage and onions during the last minute or so of sauteing. Next, for the best results you’ll want to drain your sauerkraut well before adding it to this dish. Last, after adding all the other ingredients, you can heat over medium or medium high heat until heated through.
How can I serve this creamy sausage and sauerkraut skillet?
You have some great low carb options for serving this dish. It’s a filling dish that can be served just as is to make a meal all on its own. For a pretty presentation, you can top this dish with some fresh chopped parsley or green onions. You can serve this dish with a green salad or with a keto soup. A Caesar salad is always a wonderful choice. Another option is to serve this dish with some keto biscuits, chaffles, cornbread, or English muffins. You can also serve it with a side of cooked vegetables. Some good low carb choices include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, or spinach. We also love radishes, boiled or roasted! This dish also reheats well either in the microwave or in a skillet on the stove, so it’s a great choice for leftovers!
