- 8 ounces grape or cherry tomatoes
- 14 ounces smoked sausage, sliced
- ½ medium onion, sliced
- 2 garlic cloves, minced
- 2 tablespoons fresh chopped parsley
Instructions
1. In a large skillet, over medium high heat, add olive oil.
2. Once oil is hot, add tomatoes and let cook, undisturbed, for 2 minutes. Stir and cook for 3 additional minutes. Remove tomatoes to a plate.
3. Add sausage and onions to the skillet. Saute for 8-10 minutes, or until sausage is browned, stirring occasionally. Add garlic during last minute.
4. Add tomatoes and stir to combine.
