Ingredients
For the zucchini:
- 3 medium zucchini, sliced into ¼ inch thick rounds
- 2 eggs, beaten
- ¾ cup almond flour
- ½ cup grated parmesan cheese
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ¼ teaspoon pepper
For the garlic aioli:
- ¾ cup keto mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- ½ teaspoon dijon mustard
- ½ teaspoon parsley
- ¼ teaspoon pepper
Instructions
For the zucchini:
1. Pre-heat oven to 400 degrees.
2. Line a large cookie sheet with parchment paper.
3. Cut off ends of zucchini and cut into ¼ inch thick rounds. Dry rounds with paper towels.
4. In a small bowl, add eggs and beat lightly.
5. In another small bowl, add almond flour, grated parmesan cheese, chili powder, garlic powder, and pepper. Stir to combine.
6. Dip each zucchini round in egg. Shake off exceess, then roll in almond flour mixture until coated on both sides. Place on parchment paper.
