I used boneless skinless chicken breasts for my chicken and dumplings. It’s a lean cut of chicken that gives this dish amazing taste and texture. If you’d rather, you can use boneless and skinless chicken thighs for your dish. I cut my chicken breasts into pieces so it’s easier to shred at the end. We season our chicken with a mixture of parsley, garlic powder, pepper, and poultry seasoning. Then we add some diced onions and celery to add extra flavor and texture! We then add butter and chicken broth and let this cook on high for about 5 hours. At this time, I just roughly shredded my chicken right in the crockpot. To add richness and thickness to our mixture, we add a mixture of cream cheese, heavy whipping cream, and xanthan gum then cook our mixture for about 30 more minutes on high.
How do I make the dumplings for my crockpot keto chicken and dumplings?
The dumplings for this dish are quick and easy to make but are incredibly delicious! We start by combining our dry ingredients in a mixing bowl. I used a combination of almond flour and coconut flour for these dumplings. Then we add baking powder, xanthan gum, salt, and pepper. These all help to create amazing texture for our dumplings. For our wet ingredients, we add melted butter, heavy whipping cream, and a lightly beaten egg. You’ll want to stir this mixture until all ingredients are combined. Then you can use your hands or a cookie scoop to form your dumplings into balls. To cook your dumplings, you simply add them to the crockpot and submerge them in the liquid, then cover and cook until they’re done. We made medium sized dumplings, and they only took about 10 minutes to cook. You can make smaller dumplings if you’d prefer.

This is a filling and satisfying dish that makes for a meal all in itself! It’s awesome for everyday meals, but can also be served for special occasion meals. For a pretty presentation, you can sprinkle some fresh parsley over your chicken and dumplings. I like to serve a green salad with all of our favorite toppings as a starter for this dish. If you’d like, you can serve this dish with a side of keto cornbread or English muffins. You can also serve it with a side of any low carb cooked vegetables. Some great choices include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, and spinach. You can also serve this dish with a side of mashed cauliflower, mashed kohlrabi, or mashed turnips and rutabagas, then use the broth in the dish as gravy. Yum!

Ingredients
For the chicken:
- 4 pounds chicken breasts, cut into pieces
- 1 teaspoons dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- 1 teaspoon poultry seasoning
- 1 small onion, diced
- 3 celery stalks, diced
- 4 tablespoons butter, cut into 8 pieces
- 4 cups chicken broth
- 8 ounces cream cheese, softened
- ½ cup heavy whipping cream
- 1 teaspoon xanthan gum
For the dumplings:
- 1½ cups almond flour
- ½ cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup heavy whipping cream
- 1 tablespoon butter, melted
- 1egg, slightly beaten
Instructions
For the chicken:
1. Add chicken to crockpot.
2. In a small mixing bowl, add parsley, garlic powder, pepper, and poultry seasoning. Stir to combine. Add to crockpot and toss with chicken to coat evenly.
3. Top chicken with onions and celery. Then top with butter. Pour chicken broth into crockpot.
4. Cook on high for 5 hours. Roughly shred chicken with 2 forks.
5. In a medium mixing bowl, add cream cheese, heavy whipping cream, and xanthan gum. Stir to combine. Add to crockpot and stir to combine.
6. Cook on high for 30 minutes.
For the dumplings:
1. In a medium bowl, add almond flour, coconut flour, baking powder, xanthan gum, salt, and pepper. Stir to combine.
2. Add heavy whipping cream, melted butter, and egg and stir to combine.
3. Form dough into balls. Drop into crockpot and press down to sink dumplings under liquid.
4. Cook on high for 10 minutes, or until dumplings are cooked through.
