I made these easy keto pork fajitas after having pork fajitas in a restaurant that I wanted to recreate at home. Fajitas are one of my family’s favorite meals and this version using pork was a huge hit here! We start with homemade fajita seasoning, then use a lean cut of pork along with peppers and onions to create a truly memorable dish!

I love making my own seasoning mixes, and this fajita seasoning is one of my favorites. You have some great reasons for wanting to make your own mixes. First, when you make your own, you can avoid unwanted ingredients often added to packaged mixes. Some common ones include artificial colors and flavors, corn or potato starch, corn syrup solids, maltodextrin, rice flour, sugar, and wheat gluten. Another reason to make your own mixes is that they’re incredibly quick and easy to make. Last, when you make your own, you can adjust the ingredients and amounts of ingredients for your taste preferences. For this fajita seasoning, we combine chili powder, cumin, garlic powder, keto granulated sugar, paprika, onion powder, oregano, salt, cayenne, and black pepper. This is a mild mixture. If you’d like to add more heat, you can add more cayenne or can add some red pepper flakes.
How do I make these easy keto pork fajitas?
These fajitas are quite easy to make and since they come together so quickly, they’re perfect for everyday meals! You’ll want to use two medium mixing bowls. To the first, you’ll add your pork. Then to the second, you’ll add your peppers and onions. Then you’ll add ½ of the fajita seasoning, 2 tablespoons of olive oil, and 1 tablespoon of lime juice to each bowl. A simple toss to coat the ingredients in the fajita seasoning is all that’s needed. You’ll want to use a large skillet to first cook the pork, and you’ll want to cook it just until it’s cooked through. Then after removing the cooked pork to a bowl or plate, you’ll use the same skillet to cook your vegetables. I like to cook mine until they’re crisp tender, but you can cook yours until they’re softer if you’d prefer.

You have some super low carb options for serving your fajitas. You can serve them just as they are with your favorite fajita toppings. Some great topping options include diced or sliced avocados, guacamole, shredded cheese, shredded lettuce, sliced black olives, and sour cream. Easy Keto Pork Fajitas
These easy keto pork fajitas are amazingly tender, juicy, and delicious! They’re bursting with flavor and will be a huge hit every time you serve them!
Ingredients
For the fajita seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon cayenne
- ¼ teaspoon pepper
For the pork fajitas:
- 2 pounds lean boneless pork, sliced
- 3 bell peppers, sliced
- 1 large onion, sliced
- 4 tablespoons olive oil, divided
- 2 tablespoons lime juice, divided
Instructions
For the fajita seasoning:
1. In small mixing bowl, add all ingredients.
2. Stir to combine. Set aside.
For the pork fajitas:
1. To a medium mixing bowl, add sliced pork. Add ½ fajita seasoning, 2 tablespoons olive oil, and 1 tablespoon lime juice. Stir to combine and set aside.
2. To another medium mixing bowl, add peppers and onions, remaining ½ fajita seasoning, remaining 2 tablespoons olive oil, and remaining 1 tablespoon lime juice. Stir to combine and set aside.
3. In a large skillet, over medium high heat, saute pork for 8 minutes, stirring occasionally, or until cooked through. Remove to a bowl or plate. With a paper towel, wipe skillet clean.
4. Add peppers and onions to skillet. Saute, stirring occasionally, for 5 minutes, or to desired crispness.
5. Add pork back to skillet and cook for 2 minutes or until heated through.
