Do you have fond childhood memories of your mom or grandma serving you up casseroles for dinner? What were your favorites? Do you remember the old stand-by tuna noodle casserole with crushed potato chips on top? Were you served a variety of vegetable casseroles? And we would be remiss to not mention all those casseroles topped with tater tots! Did you think going low carb and keto meant you had to give up the comfort and ease of the casserole? If so, it’s time to change your thinking!😊 This keto chicken bacon broccoli casserole is just one of the many options for making a terrific creamy and filling casserole that I think far surpasses the casseroles of our youth!
Let’s talk keto casseroles!
There are so many wonderful options for making keto casseroles. You could use a different combination of ingredients and have a new casserole every day of the year if you chose to! You can also customize casserole recipes to fit your preferences and the specific tastes of your family. That is what makes casseroles such an awesome choice! This casserole combines chicken, bacon, and broccoli with a creamy and cheesy sauce, along with homemade ranch seasoning. You can’t go wrong with that combo!
How should I cook the chicken and broccoli?
There are a variety of ways you can prepare both the chicken and the broccoli. You can bake the chicken, sauté it in a skillet on the stove, boil it in water or chicken broth, or even use a store-bought rotisserie chicken. I like to always have some cooked chicken in the freezer waiting for just such a recipe as this. I like to use fresh broccoli when possible. It is quick to steam or boil on the stovetop. But you can always use frozen thawed broccoli as well.
Helpful Hints:
*You can prepare this casserole, cover it, and keep it refrigerated for 2-3 days before baking it if you would like. This way, you can make the casserole when you have time, then pop it in the oven for a quick dinner later in the week. You can even double the recipe, bake one, and have one waiting for you to bake for another dinner or lunch option.
*You can use this homemade ranch dressing recipe in any number of recipes, including making your own ranch salad dressing or dip.
