I love making salads, and vegetables salads are some of my favorites! I’ll often use mayonnaise, sour cream, or a combination of both to make creamy vegetable salads. But for this salad, we’re using keto Greek yogurt as our creamy base. This salad comes together quickly and is perfect for barbecues, parties, and everyday meals!

Although I love to eat cucumbers all year round, for some reason I think they taste even better in the summer! If you’re wondering if cucumbers are keto, they absolutely are! Cucumbers are low in carbs and also low in calories. There are actually over 100 varieties of cucumbers found throughout the world, but you’ll most often see three main kinds in stores. These are pickling, slicing, and English cucumbers. Pickling cucumbers are smaller and fatter than the other two types. The medium to large cucumbers with dark green skin are classified as slicing cucumbers and the longer skinnier cucumbers often wrapped in plastic are English cucumbers. I used slicing cucumbers for my salad, but English cucumbers are a great option as well. For a pretty presentation, I partially peeled my cucumbers to give them a sliced appearance. To our sliced cucumbers, we add diced red onions.

The dressing for this cucumber salad comes together quickly, but it’s amazingly creamy and flavorful. It’s also lighter than some cucumber salads because we’re using keto Greek yogurt instead of mayonnaise or sour cream as our creamy base. For my Greek yogurt, I used the Two Good brand. They have plain yogurt, which is what we’re using for this salad, but they also have some delicious flavored yogurts as well. To our Greek yogurt, we add heavy whipping cream, lemon juice, and olive oil. These add richness and just a touch of acidity to even out our flavors. For seasoning, we’re simply adding dried dill and salt. If you’d like to use fresh dill for your salad, you’ll want to use 2 tablespoons of fresh in place of the 2 teaspoons of dried. You can also add more salt if you’d like.

You can serve this salad with burgers, brats, keto sandwiches, lettuce wraps, or with any grilled meat. It also pairs perfectly with pulled chicken, pulled pork, meatloaf, and roasts. You can serve this salad with any kind of seafood as well. This salad can be served as a lunch, brunch, or dinner side dish. It’s also a pretty dish, and perfect to serve for barbecues, parties, picnics, and potlucks. You can serve this salad immediately after making it, but if time allows, the flavors will meld nicely together if you refrigerate your salad for an hour or two before serving.

Keto Cucumber Yogurt Salad

Ingredients
- 3 medium cucumbers
- ½ cup diced red onions
- ½ cup keto Greek yogurt
- 1 tablespoon heavy whipping cream
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 teaspoons dried dill
- 1 teaspoon salt

1. Peel or partially peel cucumbers (to create a striped look), if desired.
2. Add cucumbers and onions to a large mixing bowl. Set aside.
