Keto cabbage radish slaw is amazingly creamy and delicious. I hope you’ll enjoy this awesome coleslaw dish as much as we do!
The addition of matchstick cut radishes takes this keto cabbage radish slaw over the top in flavor and texture. We then add an awesome creamy dressing to make this a truly memorable dish. You can serve this for everyday meals or as an addition to barbecues, parties, potlucks, and all kinds of get-togethers!
Let’s talk about our cabbage and radishes!
For this slaw, we combine green and red cabbage. Both are great keto choices, but it’s helpful to know that red cabbage is a bit higher in carbs than green cabbage. Cabbage is a low-calorie food that is packed full of important nutrients. I used ½ large head of green cabbage and ½ small head of red cabbage to make my slaw, but you can add whatever ratio you’d like. Some slaw mixtures add grated or shredded carrots, and you can add this if you’d like as it’s a small amount and doesn’t significantly change the carb count. Radishes are an often overlooked keto vegetable, but they’re an awesome low carb choice. For this slaw, I sliced my radishes, then cut them into matchstick pieces. If you’d like a stronger radish flavor, you can simply add thinly sliced radishes to your slaw.
How do I make the dressing for this keto cabbage radish slaw?
The dressing for this slaw comes together quickly but is impressively creamy and flavorful! For our creamy base, we combine keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayo for my slaw. When buying mayonnaise, you’ll want to make sure there is no added sugar or oils you don’t want in your mayonnaise. We then add apple cider vinegar to bring a nice tartness to our dressing. The addition of a little keto granulated sugar helps to balance out our flavors and adds just a hint of sweetness. I used yellow mustard for my dressing, but you could use Dijon mustard, or even spicy brown mustard if you’d like to add a kick of spice. For seasoning, we add celery seed, salt, garlic powder, and pepper. To make this dressing, you’ll simply add all ingredients to a mixing bowl and stir or whisk to combine.
What are some ways I can serve this keto cabbage radish slaw?
You have some super options for serving this coleslaw! It’s an awesome side for any kind of meat including beef, chicken, pork, and seafood. You can serve this slaw with any grilled meat including burgers, brats, and chicken. It pairs especially well with pulled chicken and pulled pork or with meatloaf or meatballs. You can also serve this slaw with keto sandwiches or lettuce wraps. It also makes a great side for beef or pork roasts or for any kind of seafood main. This slaw will always be a welcome addition to most any lunch, brunch, or dinner menu. It’s a pretty salad and is perfect to serve for barbecues, parties, and potlucks.
