I simply boiled the chicken, diced the meat, then used a combination of white and dark meat to make my salad. I used the Chosen Foods brand avocado oil mayonnaise for my dressing and it’s my go-to mayonnaise. When buying mayo, you’ll want to make sure there is no added sugar or oils you don’t want. You can also use homemade mayonnaise if you’d like. For the barbecue sauce, you can use homemade barbecue sauce, or your favorite no sugar added sauce. Again, when buying, you’ll want to check the ingredients and nutrition label to ensure you’re getting a low carb barbecue sauce without any added ingredients you want to avoid. I used ½ cup of mayonnaise and ¼ cup barbecue sauce which created a mild barbecue flavored dressing. If you’d like, you can add even more barbecue sauce.
What are some low carb options for serving this keto barbecued chicken salad?
Although this chicken salad is delicious served just as it is, you also have some wonderful low carb options for serving it. To make a more traditional sandwich, I like using keto biscuits, chaffles, or English muffins. If you have a favorite keto bread, that’s a great choice as well. Another fun option is to use this chicken salad and make a lettuce wrap. You can also serve this chicken salad as a dip. For low carb dippers, you can use raw vegetables, cheese whisps, keto crackers, or pork rinds. You can also chop or shred some lettuce and top it with this chicken salad along with any of your favorite salad toppers, such as diced bacon, shredded cheese, or tomatoes. For a pretty presentation, I like to top some iceberg or romaine lettuce leaves with this salad and serve it with sliced avocados or tomatoes.

Ingredients
- 4 cups cooked and chopped chicken
- ½ small red onion, diced
- ½ cup keto mayonnaise
- ¼ cup keto barbecue sauce
Instructions
1. In a large mixing bowl, add chicken and red onions. Toss to combine.
2. In a small mixing bowl, add mayonnaise and barbecue sauce. Stir to combine.
3. Pour mayonnaise barbecue dressing over chicken. Toss to combine.
