Let’s talk about chicken feet!
My grandma always raised chickens. Just recently I was telling my mom about this chicken feet bone broth. She told me that she knew when my grandma cooked a chicken, she always used the chicken feet; but my mom couldn’t remember what exactly she did with them. I wonder if it was to make broth! Chicken feet are a delicacy in many countries and are cooked in a variety of ways to make different dishes. Chicken feet are mostly bones, cartilage, skin, and tendons which makes them rich in collagen. This is what makes this broth extremely gelatinous and incredibly rich and nutritious. When buying, you may find these chicken parts labeled as chicken feet or as chicken paws. The main difference is that chicken feet have more of the leg left on. Either work great for this bone broth.
What other ingredients go into this instant pot chicken feet bone broth?
I used one cooked chicken carcass, with some of the skin and meat attached, and 1 pound of chicken feet to make my bone broth. We start by covering these in water and a couple tablespoons of apple cider vinegar; and we let this set for 20-30 minutes. It’s believed this may help to break down collagen and to draw out the nutrients from the bones. We then add carrots, celery, garlic cloves, and onions. These bring amazing flavor to our broth. For seasoning, we simply add coarse salt, ground turmeric, and peppercorns. If you’d like, you can add fresh turmeric in place of the ground turmeric. When I use fresh, I add a few pieces and cut them in half. If you’d like, you can also add some fresh herbs to your broth as well.
What are some ways I can serve this instant pot chicken feet bone broth?
You have some great options for serving this bone broth. It’s amazingly delicious heated up and served just as is for a warm, delicious, filling, and nutritious drink. You can heat it in the microwave or in a pan on the stovetop. You can also use this bone broth in any dish that calls for broth. It adds incredibly rich flavor to soups and stews. It can also be added to casseroles and sauces. A fun and flavorful option is to cook your vegetables in this bone broth. You can also use this broth to make homemade keto chicken gravy! After refrigerating, a layer of fat will form on the top, and the broth will turn thick and incredibly gelatinous. This is expected, and once you heat the broth, it will quickly turn back into a liquid.
