We combine whole green chiles with chicken and cheese, then top them with a delicious egg mixture which takes this dish over the top in flavor and texture. You can serve this as a main dish, or you can cut it into smaller squares and serve as an amazing appetizer!

I used canned whole green chiles to make this dish. Most canned green chiles are Anaheim chiles which are fairly mild in their heat level. If you use Hatch green chiles, they’re typically a bit hotter than regular chiles. A good thing to know about chiles is that the majority of their heat is found in their seeds and membranes. So, if you want a really mild dish, you can remove them. I used the chiles with the seeds and membranes, and still consider the dish to be mild in its heat level. For the chicken, I used half light and half dark meat. Alternately, you can use all light or all dark for yours. A rotisserie chicken is a great quick and easy option for this dish! I chopped my chicken into bite sized pieces, but you can use shredded chicken for this dish if you’d like.
What other ingredients go into these keto chicken green chile squares?
We top our chiles and chicken with shredded cheese. I used cheddar cheese, but any good melting cheese can be used for this dish. You can use mild, medium, or sharp cheddar cheese. Some other great options include colby, colby jack, gouda, gruyere, Monterey jack, mozzarella, or provolone cheese. If you want to add a little heat, you could use pepper jack cheese. Whichever you choose, I do recommend you buy a block of cheese and shred it yourself as it melts the absolute best. We then combine eggs, heavy whipping cream, garlic and onion powder, salt, pepper, and smoked paprika. For the egg mixture, you’ll simply whisk all the ingredients together until the mixture is smooth, then pour it evenly over the dish.

Ingredients
- Avocado oil spray
- 3 (7 ounce) cans whole green chiles, drained
- 2 cups cooked, chopped chicken
- 2 cups shredded cheddar cheese
- 6 eggs
- ½ cup heavy whipping cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray.
2. Cut chiles so you can lay them flat evenly onto bottom of baking dish. Remove seeds if desired.
3. Top chiles evenly with chicken. Top chicken evenly with shredded cheese. Set aside.
4. In a medium mixing bowl, add remaining ingredients. Whisk to combine. Pour over cheese.
5. Bake for 30-35 minutes, or until knife inserted comes out clean. Let set for 5 minutes before cutting and serving.
