I used an English cucumber for my salad, but you can use a regular cucumber if you’d like. English cucumbers have thinner skins and smaller seeds than regular cucumbers. So if you use a regular cucumber, you may have a slightly more watery salad, especially if you make it ahead of time. No worries, you can just drain any excess liquid before serving. Either cherry or grape tomatoes work well for this salad. I simply cut my tomatoes in half. Last, for the onions, I used red onions as they add such awesome flavor and color to this dish. I thinly sliced the onion, but you can finely dice your onion if you’d prefer to have smaller pieces of onion in your salad.
How do I make the vinaigrette for this easy cucumber tomato salad?
The vinaigrette for this salad comes together quickly and with just a few simple ingredients; but it’s amazingly tasty! The standard ratio for oil to vinegar in vinaigrettes is 3:1, which means 3 parts oil to 1 part vinegar. And although I don’t always follow this ratio, for this vinaigrette that’s what we’re using. I chose red wine vinegar for this salad, but if you’d prefer, you can use white wine vinegar or even champagne vinegar for yours. For seasoning, we simply add dried oregano, dried parsley, salt, and pepper. If you’d like to use fresh oregano and fresh parsley, you’ll want to use about ½ tablespoon of fresh in place of the ½ teaspoon of dried. You can give your salad a taste and add more salt if you’d like.

Easy Cucumber Tomato Salad

Ingredients
- 1 English cucumber, sliced
- 6 ounces cherry or grape tomatoes, halved
- ¼ medium red onion, thinly sliced
- 2 tablespoons olive oil
- 2 teaspoons red wine vinegar
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, add cucumbers, tomatoes, and onions.
2. In a small mixing bowl, add remaining ingredients. Stir or whisk to combine.
3. Pour dressing over cucumber salad. Toss to combine.
4. Refrigerate until ready to serve.
