You have some great options for the kind of sausage you use to make this dish! You can use either sausage links or ring sausage, but you’ll want to make sure it’s fully cooked sausage. I do recommend you always read your nutritional labels to ensure there is no added sugar or other ingredient you don’t want. I don’t always use the same kind of sausage, but I always check the ingredients when buying. You can use beef, chicken, pork, or turkey sausage or a sausage containing a combination of these meats for this dish. Kielbasa and cooked bratwurst are also great options to use for this dish. If you’d like to add some heat and spice to this dish, you can use a hot sausage such as hot andouille, Cajun andouille, or hot links. We add some diced onions to our sausage and saute them together.

To our sausage and onions, we add just a few simple ingredients, but they help to create an amazingly flavorful dish! I added two diced Roma tomatoes to this dish, but you can use one large vine ripened tomato if you’d like. You could also use cherry or grape tomatoes. If so, depending on their size, you can just cut them in half or into quarters. Because our sausage and onions add so much flavor, we don’t have to add a lot of additional seasoning to this dish. We just add a little garlic powder and smoked paprika. I like to stir everything together before adding the spinach. You can chop your spinach or just use your hands and tear it into bite sized pieces. Three cups might sound like a lot of spinach, but after it wilts down, it’s the perfect amount for this dish!

Ingredients
- 1 tablespoon olive oil
- 14 ounces smoked sausage, sliced
- ¼ medium onion, diced
- 1 large or 2 small tomatoes, diced
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 3 cups fresh chopped spinach
- Optional: top with fresh grated Parmesan cheese
Instructions
1. In a large skillet, over medium high heat, saute sausage and onions in olive oil for 8-10 minutes, or until sausage is browned.
2. Add tomatoes, garlic powder, and smoked paprika. Stir to combine.
3. Add spinach and cook over medium high heat, stirring occasionally, for 2 minutes or until spinach is wilted and mixture is heated through.
4. Top with fresh grated Parmesan cheese if desired.
