I’m going to tell you a silly secret about me. When I get really excited about something, sometimes I jump up and down and clap my hands! I experimented with quite a few ingredient combinations until finally coming up with the perfect 90 second keto English muffins….and, woo-hoo, it made me jump up and down and clap my hands!😂 I know you’re going to love these too!

This is a quick and incredibly easy recipe which contains just 5 simple ingredients. But the combination of ingredients results in delicious English muffins that taste like traditional English muffins. They have an amazing texture and contain only 2 net grams of carbs. The only ingredients you need to make these keto English muffins are butter, almond flour, baking powder, salt, and an egg white. For your almond flour, you’ll want to make sure you’re using almond flour and not almond meal. Both almond flour and almond meal are made from ground almonds. The main difference between the two is that almond meal is made from almonds which are unpeeled and contain the almond skin, and almond flour is made from blanched almonds, and the skins have been removed. Since this recipe uses only the white of the egg, the muffins don’t have an eggy taste either.

These English muffins are quick and easy to make, but there are a few things you can do to ensure yours come out perfect! Ramekins are perfect for making these English muffins, and I use 6 ounce ramekins to make mine. You’ll start by melting your butter in the ramekin, then tilt the ramekin to allow the butter to coat the sides. You’ll then add the dry ingredients and use a fork to mix everything together. When adding the egg white, you’ll want to use your fork and mix until everything is completely combined. After microwaving for 90 seconds, I let my English muffins cool for a couple of minutes before running a knife around the sides of the English muffin to loosen before removing it from the ramekin. Last, after cutting the English muffin in half, you’ll want to finish it by toasting it until it’s golden brown.

What are some ways I can serve these 90 second keto English muffins?
You have some awesome low carb options for serving your English muffins! They’re delicious just topped with butter. You can also top them with keto peanut butter. When buying peanut butter, I buy the kinds containing only peanuts or peanuts and salt. You can also top your English muffins with keto jam. I love making quick refrigerator jams. A couple of our favorites are strawberry jam and spiced Christmas jam. These English muffins also work beautifully for making all kinds of breakfast or lunch sandwiches. You can also use them to make breakfast casseroles that call for bread! Some other fun options include using them to make English muffin pizzas, tuna melts, and eggs Benedict. 90 Second Keto English Muffins
These 90 second keto English muffins are a game changer! They're quick and easy to make, and they don’t taste eggy!
Ingredients
- 1 tablespoon butter
- 3 tablespoons almond flour
- ½ teaspoon baking powder
- pinch of salt
- 1 egg white
Instructions
1. Melt butter in a ramekin. Swirl melted butter up and around sides of ramekin to coat.
2. Add almond flour, baking powder, and salt to the butter. Use a fork to combine mixture.
3. Add the egg white and mix well.
4. Microwave for 90 seconds. Let cool for 2 minutes.
5. Run a knife around sides of ramekin to loosen.
6. Turn ramekin upside down to remove English muffin.
7. Cut muffin in half. Toast until browned to your liking.
8. Enjoy!

I’m new to keto and I was under the impression that you couldn’t consume any carbs. I noticed this recipe has 2g of carbs. Is there a certain tiny amount you are allowed to eat?
Hi Kate, keto is low carb but you can definitely have carbs. The amount varies but many try to stay below 20 grams/day. I suggest you use the app “Carb Manager.” In your settings, you’ll put in your information and that you want to do keto. It will set up your daily goal percentages for fat, protein, and carbs. Hi Jordan, I made them in my convection oven once when my microwave died! At 350 degrees, they took about 15 minutes but were very good. I’d try the same with a regular oven. I’d love to hear how they turn out if you make them in the oven.

I I make more than one do they store well?
Hi Liz. I always make them and use them right away. If you want to make ahead and freeze them, that should work fine. You’ll want to freeze them untoasted, then thaw and toast them when you’re ready to eat them.
These were fantastic. I’ve been doing keto for two weeks and I missed my favourite breakfast of avocado and poached eggs on toast or a muffin. I no longer have to go without. The nutty taste from the almond flour pairs beautifully with the egg and avocado.

Very crumbly, fell apart after toasting. Would xantham gum give them a bit more structure?

Are there any substitutes for the Almond flour? I am allergic to almonds. Maybe Hazelnut, coconut or cassava flour? Thanks!
Hi Deanna, I’ve only made these with almond flour. You could certainly try substituting with coconut flour, but you’ll want to use less. I’d start with 1 tablespoon of coconut flour in place of the 3 tablespoons of almond flour. If you try it, I’d love to hear how it turns out!
I just made these with two different sized ramekins. Followed your directions to the T. First one was small and did not toast well. Second one was uneven and super flat. Maybe I’m just not cut out to make these .

I just made one of these and am HOOKED! It turned out delicious and had a cornbread texture…which I love. I cut it in half, lengthwise, toasted it and spread whipped cream cheese on each half. Like another review stated, best keto bread EVER!

Can you use a whole egg instead of just the white?
Hi Joan. Yes, you can use a whole egg. I find that using a whole egg makes the English muffins taste eggy, while using only the egg white doesn’t. But give it a try and see if you like them using a whole egg.
I DONY HAVE A TOASTER. COULD I USE MY AIR FRYER? DOES THIS BREAD FALL APART CRUMBLY LIKE CORNBREAD?
