Let’s talk about our ingredients!
You’ll be amazed at how incredibly flavorful this dish is combining just 5 simple ingredients and coming together in under 30 minutes. We start with Mexican pork chorizo. You can substitute with Mexican beef chorizo if you’d like. You will want to make sure you’re using Mexican and not Spanish chorizo. Mexican chorizo is a ground meat mixture which is raw and needs to be cooked, while Spanish chorizo is a cured and dried sausage which is cooked and ready to eat. To our Mexican chorizo we add diced peppers and onions. I used a combination of green and red peppers, but you can use any color or color combination you’d like for yours. I wanted to keep all of the wonderful flavor from the chorizo, so I didn’t drain any of the grease from mine. You can drain some of the grease off if you’d prefer.
