You can also use pork sausage to make this dip. I love using mild Italian sausage as it’s nicely seasoned and adds amazing flavor to all kinds of dishes. If you’d like to add some heat and spice to your dip, you can use hot Italian sausage. Another fun option is to use pork breakfast sausage, either mild or hot. If you use seasoned sausage, you’ll want to check your nutrition labels to make sure there are no unwanted added ingredients. Whichever kind of pork you use, after cooking it you’ll want to drain the grease before adding the meat to your crockpot.

The creamy base for our dip is a combination of cream cheese and sour cream. This gives our dip amazing creaminess and awesome flavor! I recommend starting with softened cream cheese and using full fat cream cheese and sour cream. For the Ro-Tel, I used original Ro-Tel. It has just a touch of heat to it. If you’d like an even milder dip, you can use mild Ro-Tel. If you’d like a hotter dip, you’ll be happy to know Ro-Tel makes a hot version! I don’t drain the Ro-Tel and think the consistency of this dip is perfect. To complete our dip, we add fried and crumbled bacon and sliced green onions. These add awesome texture and incredible flavor to our dip. Depending on the type of sausage you use, you may want to give your dip a taste and add a little salt if you’d like.

Creamy Rotel Sausage Dip
This creamy Rotel sausage dip is true comfort food! It’s amazingly rich and flavorful, and will be a huge hit every time you serve it!
Ingredients
- 1 pound pork sausage
- 2 (8 ounce) packages cream cheese, softened
- 2 (10 ounce) cans Ro-Tel diced tomatoes and green chilies, undrained
- 1 cup sour cream
- 6 slices bacon, fried and crumbled
- 2 green onions, sliced
Instructions
1. In a large skillet over medium high heat, cook sausage until no longer pink, breaking it up into small pieces as it cooks.
2. While sausage is cooking, put cream cheese, undrained Rotel, sour cream, bacon, and green onions into a 6 or 7 quart crockpot and turn on high.
3. When sausage is cooked through, drain the fat. Add sausage to crockpot and stir to combine ingredients.
4. Cook on high for 1½-2 hours or until cream cheese is completely melted and mixture is heated through, stirring every 30 minutes.
