We combine just a few simple but delicious ingredients and toss them in a quick and easy marinade. Then we thread the ingredients onto appetizer toothpicks or small skewers which makes for a special presentation!

The marinade for these appetizer bites is amazingly delicious and extremely easy to make. We start by combining olive oil and champagne vinegar. I absolutely love champagne vinegar, but you can substitute with white wine vinegar if you’d like. For seasoning, we add dried basil, oregano, and rosemary. If you’d like to use fresh herbs, you’ll want to add about 1½ teaspoons of fresh basil, oregano, and rosemary in place of the ½ teaspoon of dried. We then add garlic powder, keto granulated sugar, salt, and pepper. I used the Swerve brand for my sugar. It contains zero calories and zero net carbs and is amazingly similar in its sweetness level to regular sugar. You can give your marinade a taste and use even more salt and pepper if you’d like.

We combine just a few simple but incredibly flavorful ingredients to make this appetizer. We combine cheddar cheese, salami, green and red bell peppers, and black olives to make these appetizer bites. I used salami, with no added sugar, to make this appetizer; but you can use any cooked sausage you’d like to make yours. You will want to check your nutritional labels to make sure there is no added sugar or other ingredients you don’t want. I used green and red bell peppers because I love the color combination. You can use any color or color combination of bell peppers to make this appetizer. For cheese, I used cheddar cheese. Alternately, you can use colby, gouda, Monterey jack, mozzarella, or Swiss cheese if you’d prefer. I used black olives for my dish. If you’d rather, you could use green or Kalamata olives for your appetizer bites.
How do I make these marinated sausage and cheese appetizer bites?
These appetizers are incredibly easy to make, but once assembled, they’re so pretty! You’ll first want to make your marinade and set it aside. Then you’ll cut your sausage, peppers, and cheese. Don’t worry if your ingredients aren’t all the same shape. I do try to cut all my salami into similar sized pieces and do the same with my cheese. Your peppers will be smaller than your salami and cheese pieces. I marinate the ingredients, except for the olives, for at least 30 minutes. I don’t marinate the olives because I want to ensure they remain whole. You can use appetizer toothpicks or small skewers to make this appetizer. For each appetizer I start with an olive so it’s on top, then add a piece of pepper, a piece of cheese, another piece of pepper, and end with a piece of salami which helps the bites to stand upright.

Ingredients
- ⅓ cup olive oil
- 2 tablespoons champagne vinegar
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon dried rosemary
- ½ teaspoon garlic powder
- ½ teaspoon granulated sugar substitute (Swerve)
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 ounces salami, cut into 32 pieces
- 8 ounces cheddar cheese, cut into 32 pieces
- ½ large green pepper, cut into 32 pieces
- ½ large red pepper, cut into 32 pieces
- 32 large black olives
Instructions
1. In a large mixing bowl, add olive oil, champagne vinegar, basil, oregano, rosemary, garlic powder, keto sugar, salt, and pepper.
2. Stir or whisk to combine. Set aside.
3. Add cheese, salami, and bell peppers to marinade. Marinate for 30 minutes or up to 4 hours, stirring occasionally.
4. Thread olives and marinated ingredients onto using appetizer toothpicks or small skewers. Start with an olive, then a piece of pepper, a piece of cheese, another piece of pepper, and end with a piece of sausage.
5. Serve immediately or refrigerate until ready to serve.
Notes
