We combine nuts, coconut flakes, and seeds, and coat them in an amazingly delicious mixture to create this granola. It makes for an awesome snack option. Top it with some almond milk and you have a breakfast cereal that will always satisfy. This granola can even be served as a quick and easy dessert!

I use three different kinds of nuts to make this granola! The nuts add both amazing taste and amazing texture to this granola, and they also help to keep the carb count low. For this dish, we use a combination of pecans, walnuts, and almonds. I cut my almonds in half, then roughly chop the pecans and walnuts. You can also use your hands to break up your pecans and walnuts. You have some other great options for the kinds of nuts you add to your granola. Some great choices include Brazil nuts, hazelnuts, macadamia nuts, and peanuts. You can leave peanuts whole, but if you use any of the other nuts, you’ll want to roughly chop them. Nuts vary a bit in their carb counts, and because they’re quite a bit higher in carbs, I usually avoid cashews and pistachio nuts.
What other ingredients go into this chocolate maple keto granola?
To our nuts, we add unsweetened coconut, pumpkin seeds, and sunflower seeds. You can use coconut flakes or coconut chips, but you’ll want to make sure you’re using unsweetened coconut. We then combine melted coconut oil, keto maple syrup, and maple extract. I prefer using unrefined coconut oil as it has a stronger coconut flavor. I used Lakanto maple syrup for my granola. It’s low in carbs and quite flavorful! For sweetness, we add both keto brown and granulated sugar. I used the Swerve brand for both my sugars, but you can substitute with your favorite keto sugar if you’d like. We also add a touch of cinnamon and espresso powder. Last, we add keto chocolate chips. I used semi-sweet chips, but you can use keto milk chocolate or dark chocolate chips if you’d prefer. Two of my favorite keto chocolate chip brands are Lily’s and Bake Believe.

Ingredients
- 1 cup pecans, chopped
- 1 cup walnuts, chopped
- ½ cup almonds, chopped
- ½ cup unsweetened coconut chips or flakes
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 3 tablespoons coconut oil, melted
- 2 tablespoons keto maple syrup
- 1 teaspoon maple extract
- 3 tablespoons brown sugar substitute (Swerve)
- 3 tablespoons granulate sugar substitute (Swerve)
- 1 teaspoon cinnamon
- 1 teaspoon espresso powder
- ½ cup keto semi-sweet chocolate chips
Instructions
1. Pre-heat oven to 325 degrees. Line a large rimmed baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, add pecans, walnuts, almonds, coconut, pumpkin seeds, and sunflower seeds. Set aside.
3. In a small mixing bowl, add melted coconut oil, keto maple syrup, and maple extract. Stir to combine.
4. Pour coconut oil mixture over nut mixture and stir to completely coat nut mixture.
5. In a small mixing bowl, add brown sugar, granulated sugar, cinnamon, and espresso powder. Stir to combine. Add to nut mixture and stir to completely combine.
6. Spread in an even layer onto prepared baking sheet.
7. Bake for 20 minutes, stirring at halfway point.
8. Remove from oven and immediately stir in chocolate chips.
9. Allow to cool and break apart. Serve immediately or store in an airtight container until ready to serve.
