For this dish, we’re using bone-in skin on chicken thighs. This is dark meat chicken and turns out incredibly moist and delicious! You can substitute with a whole cut up chicken if you’d like. You can also use chicken leg quarters for this dish. Chicken leg quarters are also all dark meat and consist of the chicken drumstick, thigh, and part of the back. Whichever cut of chicken you use, I recommend taking the extra step of sauteing the chicken in some olive oil to brown the skin. You can also use avocado oil if you’d like. For this dish, I only brown the skin side of the chicken. My chicken thighs all fit into a large skillet, but if yours don’t, you can work in batches. When baking your chicken, you’ll want to make sure it reaches 165 degrees.
How do I make the sauce for these keto salsa chicken thighs?
The sauce for this dish is incredibly easy to make and is incredibly delicious. We start with salsa. I used a chunky salsa with larger pieces of tomatoes to make this dish. You can use mild, medium, or hot salsa depending on how hot you’d like your dish to be. To our salsa, we add keto brown sugar. I used the Swerve brand as it contains zero calories and zero net carbs and is incredibly similar in its sweetness level to regular brown sugar. We then add balsamic vinegar, which adds an amazing depth of flavor to this sauce. When buying balsamic vinegar, I recommend reading the nutritional labels as balsamic can vary quite a bit in its carb count. We then add mustard to our sauce. I used a combination of spicy brown mustard and yellow mustard. Alternately, you can also substitute with Dijon mustard or whole grain mustard.
What are some ways I can serve these keto salsa chicken thighs?
You have some awesome low carb options for serving this chicken. It’s quick and easy enough to make for everyday meals, yet it’s also perfect to serve for special occasion meals as well! You can always start your meal with a green salad. A Caesar salad or a wedge salad are both super choices. This chicken pairs nicely with any cooked low carb vegetable. Some great choices include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, and spinach. We also enjoy boiled radishes and roasted radishes. A side of keto biscuits, chaffles, cornbread, or English muffins would also make a great addition to your chicken meal. You can also make a low carb mash to serve as a side for this chicken. Keto Salsa Chicken Thighs

Ingredients
- Avocado oil spray
- 2 tablespoons olive oil
- 8 bone-in skin on chicken thighs
- 2 cups salsa
- ¼ cup brown sugar substitute (Swerve)
- 2 tablespoons balsamic vinegar
- 1 tablespoon spicy brown mustard
- 1 tablespoon yellow mustard
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet, heat 2 tablespoons olive oil over medium high heat. Once oil is hot, place chicken thighs, skin side down into skillet. Cook for 7-8 minutes, until skin is browned.
3. Place chicken, skin side up, into prepared baking dish.
4. In a medium mixing bowl, add remaining ingredients. Stir to combine.
5. Pour salsa mixture over chicken thighs. Bake for 40-50 minutes, or until temperature of chicken reaches 165 degrees.
