When you want an amazingly delicious comfort food dish, this keto ground beef zucchini bake is a perfect choice. We start with an awesome zucchini crust layer, then top it with a ground beef spaghetti sauce layer. We then top it all with a ridiculous amount of cheese which takes this dish over the top in flavor and cheesiness! Yum!

The zucchini crust layer for this dish contains just a few simple ingredients, but this crust is both delicious and low carb! To make our crust, we start by grating our zucchini. I used a box grater and grated mine using the largest hole side of the grater. Setting the zucchini in a strainer and sprinkling salt over it helps to draw much of the moisture out of the zucchini. We then squeeze as much of the liquid from the zucchini as possible. While the zucchini and salt are setting, we combine our eggs, Italian seasoning, and shredded mozzarella and colby jack cheese in a mixing bowl. Then after squeezing out the excess liquid, we add our grated zucchini. We then spread this mixture evenly onto the bottom of a baking dish sprayed with avocado oil spray and bake it at 375 degrees for 30 minutes.

I make the ground beef layer for this dish while the zucchini crust is baking. We start by cooking our ground beef with diced peppers, diced onions, salt, and pepper. I used 90% lean ground beef for this dish, but you can use a leaner or fattier mixture for yours. Either way, you’ll want to make sure you drain the grease after cooking. I used a combination of green and red bell peppers for my dish, but you can use any color or color combination you’d like for yours. After cooking the ground beef, peppers, and onions, we add keto spaghetti sauce. You can use any no sugar added sauce or can easily make homemade keto spaghetti sauce. After spreading the ground beef layer over the zucchini crust layer, we top the dish with shredded cheese and lots of it!🧀

Ingredients
For the zucchini crust layer:
- Avocado oil spray
- 2 medium zucchini
- 1 teaspoon salt
- 2 eggs, lightly beaten
- 1 teaspoon Italian seasoning
- 1½ cups shredded mozzarella cheese
- ½ cup shredded colby jack cheese
For the ground beef layer:
- 1½ pounds ground beef
- ½ medium green pepper, diced
- ½ medium red pepper, diced
- ½ small onion, diced
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (24-26 ounce) jar keto spaghetti sauce
- 1½ cups shredded colby jack cheese
- ½ cup shredded mozzarella cheese
Instructions
For the zucchini crust layer:
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. Grate zucchini and place into a colander. Sprinkle zucchini with salt. Let set 10 minutes.
3. Squeeze liquid from zucchini.
4. In a medium mixing bowl, add eggs, Italian seasoning, and cheeses. Stir to combine. Add zucchini and stir to combine.
5. Press evenly onto bottom of prepared baking dish. Bake for 30 minutes.
For the ground beef bake:
1. In a large skillet, over medium high heat, saute ground beef with peppers, onions, salt, and pepper until ground beef is cooked through. Drain grease.
2. Add keto spaghetti sauce and stir to combine. Decrease heat to medium and simmer 5-10 minutes.
3. Pour over baked zucchini crust layer. Sprinkle evenly with cheese.
4. Bake for 20 minutes. Let set 5 minutes before serving.
