Let’s talk about our pork roast!
I used a bone-in pork shoulder roast to make this dish. This is a nicely marbled cut of pork which is often less inexpensive than other cuts of meat, but is amazingly delicious when prepared correctly. This cut is best suited to a longer cooking time, often in a crockpot cooking low and slow to create tender fall apart meat. You can also use a boneless pork shoulder roast to make this dish. I recommend placing your pork roast fat side up in the crockpot for a couple of reasons. First, while it’s cooking the fat will cook which serves to continuously baste your meat which helps to make the meat incredibly moist and delicious. Another reason to cook the roast fat side up is that when you remove the cooked roast, you can easily remove some of the fat if you’d like.
What other ingredients go into this crockpot pork and sauerkraut?
We add just a few simple ingredients to our roast, but they combine with the meat to create an amazingly delicious dish. We combine sauerkraut, beef broth, chopped onions, keto brown sugar, garlic powder, salt, and pepper. I add all of these to a large mixing bowl and stir to combine the ingredients. I used refrigerated sauerkraut from a bag, but you can use canned sauerkraut if you’d like. Just an FYI, I use regular and not Bavarian sauerkraut, as most Bavarian sauerkraut includes added sugar.😉I love the flavor that beef broth brings to this dish, but you can substitute with chicken broth or even with vegetable broth if you’d like. For the keto sugar, I used the Swerve brand. It contains zero calories and zero net carbs. It’s also incredibly similar in its sweetness level to regular brown sugar.
What are some ways I can serve this crockpot pork and sauerkraut?
You have some awesome low carb options for serving this dish. A great choice is to start your meal with a green salad. We especially love Caesar salads and wedge salads. I also love to cut up some iceberg or romaine lettuce, then serve it with some of my family’s favorite toppings. Some of these include bacon, diced tomatoes, hard boiled eggs, shredded cheese, and sliced avocados. You can also serve this dish with a side of cooked vegetables. Some good low carb options include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, and spinach. I especially love kohlrabi! I love it mashed, roasted, and sauteed. Some other great sides to serve with this dish include cauliflower rice, cauliflower mac and cheese, and cheesy turnips. You can also serve this dish with some keto biscuits, cornbread, or English muffins.

Crockpot Pork and Sauerkraut

Ingredients
- 6-9 pound bone-in pork shoulder roast
- 32 ounces sauerkraut, divided
- 1 cup beef broth
- 1 small onion, chopped
- ½ cup brown sugar substitute (Swerve)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Remove pork roast from packaging and place, fat side up, into crockpot.
2. In a large mixing bowl add remaining ingredients. Stir to combine.
3. Pour sauerkraut mixture over and around sides of pork roast.
4. Cook on low for 8-10 hours.
5. Remove roast from crockpot. Discard bone and as much fat as desired. Use 2 forks to shred roast or use a knife to roughly chop.
6. Place pork back into crockpot and toss to combine with sauerkraut mixture.
Notes
Serving size is 4 ounces of pork with approximately ¼ cup sauerkraut.
