I love shrimp and this creamy keto Tuscan shrimp is one of my favorite shrimp dishes! It’s perfect just as is, or you serve it over some cauliflower rice. This dish comes together quickly so you can make it on even your busiest of days. It’s also a beautiful dish and is perfect for special occasion meals!
Let’s talk about our shrimp!
I love shrimp, both served chilled and in hot dishes. Chilled, it’s amazing served as an appetizer with keto cocktail sauce or in shrimp salads. You also have a variety of options for how to cook shrimp. It can be boiled, broiled, deep fried, grilled, roasted, or sauteed. For this dish, we’re sauteing our shrimp in a combination of butter and olive oil. One of the great things about cooking shrimp is that it only takes a few minutes to cook. You only need to saute shrimp for 2-3 minutes per side, until they’re pink and no longer opaque. I chose to remove the tails before cooking, but you can leave them on if you’d like. It’s really just a personal preference. You’ll want to add the garlic during the last minute or so of cooking your shrimp to ensure your garlic won’t burn.
What ingredients go into the sauce for this creamy keto Tuscan shrimp?
The sauce for this dish contains just a few simple ingredients, but it is so rich, creamy, and flavorful! To our shrimp, we start by adding fresh grated Parmesan cheese, heavy whipping cream, chopped sun-dried tomatoes, salt, and pepper. For the cheese, I recommend buying a wedge of Parmesan and grating it yourself. If you’d like, you can substitute with Asiago or Pecorino Romano cheese. The heavy whipping cream adds such wonderful richness to this dish and helps to thicken the sauce as well. I used sun-dried tomatoes in oil to make this dish and just roughly chopped them. After adding these ingredients and stirring to combine them with the shrimp, we add our fresh spinach. You’ll just want to stir in the spinach and then cook it for a minute or two until the cheese is melted and the spinach is wilted.
What are some ways I can serve this creamy keto Tuscan shrimp?
You have some awesome low carb options for serving this shrimp! You can always start your meal with a green salad. We especially love Caesar salads and wedge salads. I also love to chop up some iceberg or romaine lettuce, then serve it with our favorite salad toppings. Some of our favorites include bacon, diced tomatoes, hard boiled eggs, shredded cheese, and sliced avocados. You can also serve this dish with a side of cooked vegetables. Some great low carb choices include asparagus, broccoli, Brussels sprouts, cauliflower, and green beans. You can also serve this shrimp with a side of keto biscuits, cornbread, or English muffins. This dish is filling all on its own, but if you’d like, you can serve it over some cauliflower rice. You can also serve this dish over shirataki noodles or hearts of palm noodles!

Creamy Keto Tuscan Shrimp

Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1½ pounds shrimp
- 2 garlic cloves, minced
- 1 cup fresh grated Parmesan cheese
- 1 cup heavy whipping cream
- ¼ cup chopped sun-dried tomatoes
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 ounces fresh spinach, chopped
Instructions
1. In a large skillet, over medium high heat, saute shrimp in butter and olive oil 2-3 minutes per side, until cooked through. Add garlic during last minute.
2. Add Parmesan cheese, heavy whipping cream, sun-dried tomatoes, salt, and pepper.
3. Stir to combine. Simmer 2-3 minutes, until heated through.
4. Add spinach and stir to combine. Heat 1-2 minutes, until cheese is melted and spinach is wilted.
