We stud our ham with whole cloves, then make an awesome glaze to take it over the top in flavor. For this ham, we’re using a bone-in fully cooked ham. I used a shank ham for this dish. You can also use a bone-in ham butt if you’d like. Since our ham is fully cooked, we’re simply warming it up slowly in the oven. Most hams are cured with salt and sugar. The amount of sugar is usually minimal; but you can also look for uncured ham which contains no added sugar. I love the look and taste that comes about from studding my ham with whole cloves. To do this, we score the ham diagonally, then score it in the opposite direction to create a criss cross pattern. You’ll only want to cut your ham ¼-½ inch deep. You’ll then simply press the sharp ends of the whole cloves into the centers of your criss cross cuts. You can use as few or as many cloves as you’d like.

The glaze for this ham is super delicious. Our glaze ingredients include keto brown sugar, balsamic vinegar, coarse brown mustard, Dijon mustard, and cinnamon. I use the Swerve brand for my brown sugar. It contains zero calories and zero net carbs and is delicious. When buying balsamic vinegar, you’ll want to check the nutrition labels as the amount of carbs can vary quite a bit. I use balsamic which contains 2 grams of carbs per tablespoon, but others can contain as much as 9 grams per tablespoon. One of the great things about this glaze is that it doesn’t have to be heated up on the stove. We simply add all of our glaze ingredients to a bowl, stir them together, then brush the glaze on our ham. I glaze the ham during the last 30 minutes of baking to ensure the sugar will caramelize but not burn.

I like to slice the ham, then drizzle some of the drippings over the ham, or serve the ham with a small dish of the drippings. You can serve this ham with a side of keto biscuits, chaffles, cornbread, or English muffins. Using chaffles or English muffins is also a great way to make a keto ham sandwich! Some other great sides include cauliflower mac and cheese, keto stuffing, and keto sweet potato casserole. Any low carb cooked vegetable would also make a great side option to serve with this ham. Some good choices include asparagus, broccoli, Brussels sprouts, cauliflower, and green beans. You can also serve this ham with coleslaw, a green salad, or a low carb side salad.

Ingredients
- 1 (8-11 pound) bone-in fully cooked ham
- Whole cloves (optional)
- 1 cup brown sugar substitute (Swerve)
- 3 tablespoons balsamic vinegar
- 2 teaspoons coarse ground mustard
- 2 teaspoons Dijon mustard
- ½ teaspoon cinnamon
Instructions
1. Pre-heat oven to 325 degrees.
2. Using a sharp knife, score ham diagonally. Then score in the opposite direction creating a criss cross pattern. Stud ham with whole cloves if desired.
3. Place ham into a large baking dish. Cover ham with foil.
4. Bake ham for 2 hours.
5. Remove ham from oven and remove foil. Carefully drain and discard drippings.
6. In a small bowl, combine brown sugar, balsamic vinegar, mustards, and cinnamon. Whisk to combine.
7. Brush balsamic brown sugar glaze evenly over ham. Return ham to oven and bake, uncovered, 30 minutes, or until temperature reaches 140 degrees, basting once or twice. If using cloves, remove and discard before serving.
