You can use a bag of coleslaw mix or can use fresh cabbage to make this delicious and easy keto Asian coleslaw. We also make a quick and easy dressing for our coleslaw which is amazingly flavorful. This coleslaw is a perfect side for all your favorite mains and makes a great addition to barbecues and picnics as well!
Let’s talk about our coleslaw mix!
I love making dishes from scratch. This includes everything from dressings and sauces, to salads, sides, and main dishes. I think it’s also important to have some shortcuts to cooking. Coleslaw mixes are a wonderful quick and easy option and they’re also low in carbs. Most mixes combine green and red cabbage with shredded carrots. And while I typically avoid carrots due to their higher carb count, the amount added to coleslaw mixes is quite small, so I find it a great option to use. When I make my own coleslaw mix, I combine approximately 5 cups of chopped green cabbage with 1 cup of chopped red cabbage. Then I add 2-4 tablespoons of grated carrots. You can absolutely omit the addition of grated carrots if you’d like. For this dish, we’re also adding ¼ small red onion which adds amazing flavor and crunch to this coleslaw.
How do I make the dressing for this easy keto Asian coleslaw?
The dressing for this coleslaw is amazingly delicious but comes together quickly using just a few simple ingredients. To make this dressing, we combine keto mayonnaise, keto sugar, rice vinegar, sesame seeds, tamari, toasted sesame oil, salt, garlic powder, and onion powder. When buying mayonnaise, you’ll want to make sure there is no added sugar or other ingredients you don’t want. I used the Chosen Foods brand avocado oil mayonnaise to make this dish. It’s also incredibly easy to make homemade mayonnaise, and it’s so creamy and delicious! You’ll also want to make sure you’re using plain rice vinegar and not seasoned rice vinegar. This is because seasoned rice vinegar contains sugar or high fructose corn syrup. To make this dressing, we simply add all the dressing ingredients to a small mixing bowl, then stir or whisk to combine the ingredients.
