When I make my own, to come up with about the same amount as a bag of coleslaw mix, I combine 5 cups of chopped green cabbage with 1 cup of chopped red cabbage, then add about three tablespoons of grated carrots. You can omit the carrots if you’d like. One of the great things about this recipe is that you don’t have to cook the cabbage before adding it to the casserole. This creates tender cabbage which still has some awesome crunchiness to it. To our cabbage, we’re adding diced onions, cooked and chopped chicken, and shredded cheddar cheese. You can use roughly chopped chicken, diced chicken, or shredded chicken for this dish. For your cheese, I recommend buying a block of cheese and shredding it yourself.

I always recommend using full fat sour cream as I find it to be superior in taste and in creaminess. For the paprika, you can use regular paprika in place of the smoked paprika if you’d prefer. To make the topping for this casserole, we’re combining melted butter with crushed pork rinds and Italian seasoning. Crushed pork rinds are an amazing low carb option for toppings and as a breading for all kinds of meats. Pork rinds contain zero carbs. They create an awesome crunchy topping for this casserole which browns up perfectly.

Ingredients
- Avocado oil spray
- 16 ounce bag coleslaw
- ¼ medium onion, diced
- 2 cups cooked chopped chicken
- 2 cups shredded cheddar cheese
- 1½ cups sour cream
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
- 1½ cups crushed pork rinds
- 2 tablespoons butter, melted
- 1 teaspoon Italian seasoning
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large mixing bowl, combine coleslaw mix, diced onions, chicken, and shredded cheese. Toss to combine.
3. In a small mixing bowl, add sour cream, garlic powder, salt, pepper, and smoked paprika. Stir to combine.
4. Add sour cream mixture to cabbage mixture. Stir to combine. Transfer mixture to prepared baking dish.
5. In a small mixing bowl, add crushed pork rinds, melted butter, and Italian seasoning. Stir to combine. Sprinkle evenly over casserole.
6. Cover with foil. Bake for 40 minutes. Uncover and bake 15 minutes, or until top is nicely browned.
