I love quick and easy desserts, and this keto chocolate ricotta pudding is a fun and delicious sweet treat. We combine 4 simple ingredients and simply use a blender to blend until the pudding is smooth. This dessert is awesome all on its own, but I also like topping it with homemade keto whipped cream.

Most of the ricotta cheese you’ll find at your local grocery stores is made from cow’s milk. But ricotta can also be made from sheep, goat, or water buffalo milk. It’s a fresh cheese, which means it hasn’t been aged for any significant amount of time. It also has a very high moisture content, which is why we drain our ricotta and pat it dry before making our pudding. Ricotta is thick and creamy in texture. Taste wise, it’s mild with just a hint of nutty flavor. Because of its neutral taste, ricotta cheese works great in both sweet and savory dishes. To create the creamiest texture for this dessert, I recommend using whole milk ricotta cheese.
What other ingredients go into this keto chocolate ricotta pudding?
To our ricotta, we add keto powdered sugar, unsweetened cocoa powder, and vanilla. I used the Swerve brand for my powdered sugar. It contains zero calories and zero net carbs. It’s also amazingly similar in its sweetness level to regular powdered sugar. Swerve also makes granulated and brown sugar. You can use Dutch processed or regular cocoa powder to make this pudding. The difference between the two is that Dutch processed cocoa powder adds the step of neutralizing the cacao beans. This results in cocoa powder that is milder in flavor and darker in color. I enjoy Rodelle Dutch processed cocoa powder and that’s what I used to make this dessert. To make this pudding, we simply add all the ingredients to a blender, then blend until the mixture is smooth. I like to refrigerate my pudding for 30-60 minutes before serving, but it can also be served immediately.
How do I make homemade keto whipped cream to top this keto chocolate ricotta pudding?
It’s incredibly easy to make homemade keto whipped cream. Once I started making homemade, I never wanted anything else as it’s superior in taste and in its creaminess! I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll want to beat this mixture until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. You can give your whipped cream a taste and add even more keto powdered sugar if you’d like a sweeter whipped cream. It’s also easy to double this recipe. Another fun thing to do is to experiment with using different kinds of extract in place of the vanilla extract. You can also add a little cinnamon if you’d like.

Ingredients
- 2 cups whole milk ricotta cheese
- ½ cup powdered sugar substitute (Swerve)
- ¼ cup unsweetened cocoa powder
